Raspberry Vanilla Smoothie:

1 cup raspberries (1 fruit)
1/2 cup milk (1/2 dairy)
1/2 cup vanilla (or fav) yogurt (1/2 dairy)
1 tsp vanilla (optional) -----
6 ice cubes crushed -----
1 drop Stevia extract (or other sweetener)-----

*Blend all ingredients in a blender or similar. Makes 1 large or 2 small shakes. You can use all milk, or all yogurt, depending on whats on hand and your personal preference. This is great when you have to fit in your last fruit & dairy, and want something different. *Pits sink to the bottom, if allowed to stand for a few minutes*

I really enjoy my smoothies... usually use:

3 oz. wildberry yogurt
1 cup of frozen strawberries
1/2 - 1 packet of Sugar Twin
1/2 cup water

(1/2 Fruit, 1/2 Dairy)

Sounds good MicheleR, I guess its the same concept except I use ice cubes instead of the water.

Spicy Egg Wrap:

1 egg scrambled
2 tablespoons fat free salsa
1 6" diet tortilla (I use bodywise)
cooking spray

*Spray pan with cooking spray, scramble egg, add salsa, heat through. Pour scrambled egg/salsa mixture onto tortilla, roll up. I usually add a bit of tobasco, cause I like mine spicy! You could add veggies like peppers, onions, mushrooms etc.

1/2 protein, 1/2 free exchange, 1 starch, 1/2 fat.

Baked Egg & Tomato

1 medium tomato
1 egg
Garlic, Herbs & Spices

*Preheat oven to 425*. Cut the top off of the tomato, scoop out seeds and pulp, sprinkle with herbs, spices and garlic. Crack the egg into the tomato, sprinkle again with herbs and spices, or Mrs Dash. Bake 20 mins for soft yolks, 30 - 35 mins for hard.

1 veg, 1/2 protein.

Peanut Butter Banana Yogurt

1/2 cup fat free sugar free vanilla yogurt
1/2 banana sliced
1/2 tablespoon sugar free sodium free peanut butter

*Put 1/2 cup yogurt in a bowl, add the peanut butter, mix well. Top with banana slices.
This is great as a smoothie aswell, just put all ingriedients into a blender, add 6 crushed ice cubes, blend on high for 1 minute.

1/2 dairy, 1 fruit, 1 fat

Southwestern Chipotle Egg & Turkey Wrap

1 egg (1/2P)
2oz of Turkey(1/2P) (Blue Menu - Seasoned chunk turkey)
Mrs Dash Southwestern Chipotle
Cooking Spray
1 or 2 tsp of Mayo (1 or 2F)
1 tortilla (WW for me) (1S)
Optional -
0.5 oz of grated cheese. (1/2 D)

I cook my egg scramble with Pepper & Mrs Dash Southwestern Chipotle.
I add the 2oz of Turkey chunks and mix it together for like 2 minutes until heated. I add the cheese and let it melt.

1P, 1or2F, 1S + 1/2D (optional)

Tofu Smoothie

1/2 c of Soft Tofu (1/2P)
1 c of Skim Milk (1D) - you could also go 1/2 cup and add water.
1/2 c Raspberries (1/2F)
1/4 banana (1/2F)
A bit of sweetener.

Mix all together in blender and drink!! Very very healthy and good mmmmm!

1/2P, 1D (or 1/2D), 1F

Maple glazed sweet potatoes (my fav!)

2 c of cubed sweet potatoes (4V)
1/3 c maple syrup (I use the no sugar one - count as nothing!)
1 tsp of margarine (melted) (1F)
Freshly ground pepper to taste

1. Preheat oven to 400F.
2. Arrange sweet potatoes in an even layer in a glass baking dish (or whichever you have). Combine maple syrup, margarine and pepper. Stir in baking dish, covering the potatoes.
3. Bake the sweet potatoes for 15 minutes. Stir and cook, stirring every 15 minutes, until tender and starting to brown, 20-30 minutes.

2 Servings:
2V, 1/2F

Meatloaf in muffin pan (another favorite)

Extra lean beef (the amount necessary - hard to tell you!!)
1 egg (1/2 P)
1 tbsp of bread crumbs (don't really count it since you'll eat 1/12th of this.
2 tbsp of Worcesthire sauce (something else that doesn't really count...almost no calories)
Mustard (to your taste)
Garlic Powder (to your taste)
Pepper (to your taste)
Parmesan sprinkle (again... really small in portion - not counted)

You can add any cubed (tiny cubes) veggies in here (carrots, peppers & oignons is good).

I sometimes add a little 0.5 oz cube of cheese (or smaller) in the center of those melts and it's OH SO GOOD!

Preheat oven to 400F.

So mix all the ingredients above in bowl. I separate in batches of 2 oz each. If you want to have them bigger, you can.

Spray cooking spray on a muffin pan (I use the 12 muffin one).
I usually fill at least 10 muffins with my meat but I try to do 12 as these are OH SO GOOD as leftovers!

Cook for above 25-30 minutes. DELICIOUS!

2 Servings (of 2oz each):
1P, Veggies if you have any, Dairy for the cheese.

Pasta Frittata (LOVE IT!)

4 portions

Egg Substitute = 4 eggs (2P)
250 g of Fat Free Deli Ham (thick slices, cubes) (2P)
2 c of Whole Wheat Linguine - cooked (4S)
1 c of mushrooms - cut (1V)
1 c of peppers - cubed (1V)
1 tsp Olive Oil (1F)
2oz shredded cheese - strong is best (2D)
Pepper to taste
Garlic Powder to taste
Cooking Spray

1- Cook pasta according to instructions. Drain & put in fridge for 10 minutes.
2- Mix Egg Substitute with Pepper & Garlic Powder.
3- Remove pasta from fridge and mix with veggies & olive oil.
4- Spray cooking pan and put on High. Wait a few seconds and add the pasta mix to your cooking pan. Bring down it do Medium heat.
Let it cook for about 30 seconds.
5- Gently pour the Egg mix throughout the pasta mix.
6- Move your pan to make sure the egg mix is spreading evenly.
7- Cook on medium for about 20 minutes or until the egg is set.
8- Preheat the oven to Broil (500F). If your pan is not oven free, cover with thick foil (it works - no worries...done it LOTS of times). Just double the foil if you fell unsure!
9- Once egg is set, add grated cheese on top and broil in the oven for about 5-10 minutes (to taste).

Separate your pan in 4 and you have 4 servings! SOOO GOOD!

Big Country Breakfast (courtesy of Aditi)

1tsp olive oil
1 small potato, diced
2 large eggs
1 serving ( found on package) Veggie
Canadian Bacon
2 slices toasted diet bread
2 tbsp sugar free jam ( you can use salsa instead of jam)
1 medium orange sliced
1/2tsp Flavo-Magic

Preheat oven to 400F
Heat olive in a large pan. Saute potato until golden brown.
Poach eggs or soft boil. Keep warm
Bake veggie bacon in oven until golden and crisp.
Serve poached eggs with potato, veggie bacon, toast and jam, and orange slices. Sprinkle Flavo-Magic over eggs and potato as desired.

Serves two

One serving equals 1pro, 1/2 fruit,1 starch, 1/2 fat , 1/2 free exchange

VHP Iced Capp:

Chocolate VHP
2 heaping tsp instant coffee
an entire tray of ice cubes
14 oz cold water
splenda to taste

Throw all into blender & blend.

*1 protein
1 fat
1 starch

Celery - finely diced (1 cup)
Onion - finely diced (1 cup)
Cremini mushroom - finely chopped (4 cups) - you can use white mushrooms if you prefer
Egg - 1 large - beaten slightly
Ground Extra-Lean Turkey - 24 oz
Porcini - 1/3 oz - if you can't find porcini you can use any dried mushroom you can find. Grind it up into powder by using a coffee grinder
Whole Wheat Bread slice - 1 - bake in oven until dry then crush into breadcrumbs
Tomato Paste - 2 tbsp
Worchestershire Sauce - 1 tbsp
Thyme - Fresh (2 tsp) or dried (1 tsp)
Flavo magic and pepper to taste

Soften celery and onion in a pan. You can spray the pan with PAM if you like, but there is enough moisture in the celery and onion to allow them to sweat naturally. After 2-3 mins add the mushrooms and cook until almost all the mositure from the mushrooms has evaporated. Put the mushroom mixture into a mixing bowl and allow to cool for 10 mins.
Once cool, add in the egg, then the remaining ingredients, saving the turkey to add last.
Bake at 375 degrees for 40 mins or until done.
To help with portion control, I baked my meatloaf in a 6-cup muffic tray. The mix divides up perfectly!

Each serving:
1 Protien
1 Vegetable
1/6 Starch

24 oz ground beef
3 cups finely chopped onions
1 cup finely chopped celery
2 cups diced tomatos
2 tsps ginger/garlic paste
green chillies (optional)
4-6 tsp spices - use any spices you have such as garam masala, East Indian bottle masala, Bafad masala all of which can be purchased at an Indian store
3 small potatos (optional)

On low heat, saute the onions and celery in their own juices. If you prefer to spray some PAM or use your fat portion for the day (oil) you may do so. When softened, add tomatoes, ginger/garlic paste, green chillies and spices. Increase heat to low-medium. The amount of spices you use is really on the level of heat you prefer in your food. At a minimum, try and use 4 tsps or you may end up with not much in flavour. Potatoes soak up some of the spice. If you choose not to add potatoes, you can reduce the amount of spice you are using.
Cook this mix until the tomatoes have almost disintegrated, roughly 6-8 mins. Add ground beef, cover and cook for about 20 mins. Add the potatoes and cover. Cook until potatoes are done, roughly about 45 mins. You may choose to use Mrs Dash Table Blend to add a little more flavour to your curry. You know your dish is done when the potatoes are cooked, but the dish still looks moist. Cooking with the lid on will ensure your meat and potatoes cook evenly and prevent drying.

Enjoy your curry on its own or with whole wheat pita.

Got some new recipes from my centre. Haven't tried them yet so let me know how you like them :)

Diet Muffins

2 eggs
1 cup All Bran
1 cup Bran
1 1/2 banana (mashed)
3 pkgs sweetener (brown or white)
1 tbsp cinnamon
1/2 tsp baking powder
1/2 cup skim milk

* Preheat oven to 350
* Spray muffin pan with Pam
* Mix all ingredients together until moist
* Spoon into 6 cup muffin tin
* Bake 18 minutes

Serves 6
1 serving = 1 strach, 1/2 fruit

Variations: Add two chocolate chip protein bars; just chop up into tiny squares. Count 1/2 protein.

Add 1 medium carrot, grated and 12 tbsp of raisins. Count 1/4 veggie and 1 free exchange.

Add 1 1/2 servings of your favourite fruit. Count as and additional 1/2 fruit.

Use 12 oz of your favourite stirred yogurt instead of bananas and the milk. Count as 1 starch and 1/2 dairy (try apple crumble Source yogurt)

Hawaiian Chicken

16 oz boneless skinless chicken thighs
2 cups fresh, chopped pineapple
1 cup chopped onion
8 tbsp fat free Catalina dressing
1/2 tsp each of pepper, garlic powder, flavor-magic
1/2 cup water

Place onion in bottom of deep baking dish or in the crockpot, then place chicken on top. Next place pineapple and spices on the chicken. Pour dressing and water over top. Cook in oven 350 degrees for 40-45 minutes or in crockpot 6-8 hours.

Serves 4
1 serving = 1 protein, 1 fruit, 1/2 veggie, 1 free exchange

Great served with brown rice and veggies!!!

Chili-Cheese Surprise

1/2 cup low-sodium broth
1/2 cup Healthy Choice pasta sauce
1/2 diced onion
1 cup diced green pepper
1 1/2 tsp chili powder
1 tsp oregano
1/2 tsp ground cumin
1 clove minced garlic
8 oz skinless turkey or chicken breast cooked and diced
1 cup cooked elbow macaroni
2 oz shredded cheese

* Preheat oven to 350F
* Combine broth and pasta sauce in a large, nonstick skillet.
* Stir in onion, green pepper, chili powder, oregano, cumin, and garlic.
* Add turkey or chicken and elbow macaroni.
* Cook five minutes longer.
* Transfer contents of skillet to a shallow casserole dish.
* Top evenly with cheese and bake for 15 minutes or until cheese is melted.

Serves 2
One serving = 1 protein, 1 vegetable, 1 starch, 1 dairy, 1 free exchange

Broccoli Bake

1 cup cooked brown rice
2 cups 1 % cottage cheese
2 cups broccoli
2 cups green pepper, chopped
4 oz shredded cheddar cheese
Dash cayenne pepper
1 tsp Flavo-magic
1/2 tsp garlic powder

* Preheat oven to 350F.
* Combine all ingredients in a casserole dish.
* Bake for 30 to 45 minutes.

Serves 4
1 serving = 1/2 protein, 1 vegetable, 1 starch, 1 dairy

Angel Hair Pasta with Chicken

2 tbsp olive oil
2 chicken breast (skinless boneless, butter flied and cut into 1 inch cubes)
1 carrot (sliced diagonally into 1/4 pieces)
1 10 oz pkg frozen broccoli florets thawed
2 garlic cloves minced
12 oz angel hair pasta
2/3 cup low sodium chicken broth
1 tsp dried basil

* Heat 1 tbsp of oil in a medium skillet over medium heat.
* Add chicken, cooke about 5 minutes, drain on paper towel.
* Heat remaining oil in same skillet (begin heating water for pasta).
* Add carrots to oil and cook for about 4 minutes.
* Add broccoli and garlic, cook for another 2 minutes.
* Cook pasta according to package.
* While pasta is cooking add broth and basil to skillet.
* Return chicken back to mixture.
* Reduce heat and simmer for 4 minutes.
* Drain pasta. Place in a large bowl top with chicken and vegetable mixture.

Serves 4

Cranapple Pork Tenderloins

1 cup cranberries, fresh
1 cup cooking apples, coarsely chopped and peeled
1/2 cup packed dark brown sugar substitute
1/2 cup water
1/2 cup onion, chopped
1 tbsp fresh ginger, minced and peeled
1 tsp curry powder
1/8 tsp ground red pepper
16 oz pork tenderloin
1/4 tsp black pepper
cooking spray

* Preheat oven to 350F.
* Combine first 8 ingredients in a small saucepan and bring to a boil.
* Reduce heat, cover and simmer for 20 minutes. Uncover and simmer for 2 minutes or until thick. Cool 10 minutes.
* Place mixture in a blender or food processor and process until smooth.
* Trim fat from pork and sprinkle with pepper.
* Divide cranberry mixture in half. Brush pork with half of the cranberry mixture.
* Place pork on a broiler pan coated with cooking spray.
* Bake at 350F for 30 minutes or until thermometer registers 160F (slightly pink).
* Serve pork with remaining cranberry sauce.

Serves 4

Potato Lasagne

16 oz lean ground beef
2 cloves garlic
2 cups legal spaghetti sauce
1 tsp Italian seasoning
1/2 tsp pepper
6 small potatoes, peeled and sliced thin
2 tsp olive oil
4 oz shredded marble cheese

Optional - 1 cup sliced onions, 1 cup chopped mushrooms and 1 cup chopped peppers (add 1 vegetable to serving).

HINT - cook potato slices in microwave with a tad of water (covered) for about 6-8 minutes to decrease oven time to about 30 minutes.

In a large skillet cook beef and garlic. (If using vegetables add here) Cook 1-15 minutes or until beef is cooked all the way through. Drain off any fat and stir in spaghetti sauce, Italian seasoning and pepper. In a bowl, toss potatoes with oil. Spread half the potato slices in bottom of shallow 8 cup baking dish. Spoon half the meat sauce evenly over the potatoes and top with half the cheese. Repeat with reamining potato, meat and cheese. Cover and bake on 350F for 1 hour and 15 minutes or until potatoes are tender. Uncover and bake for 5 minutes or until cheese is bubbly and golden brown. Let sit 15 minutes before serving.

TIP: If covering with foil, spray foil with non-stick spary to prevent cheese from sticking.

Serves 4

Sheppard's Pie

16 oz lean ground beef
1 1/2 tsp tomatoe paste
3/4 cup low sodium beef broth
1 cup frozen peas, corn & carrots
garlic powder & pepper to taste
4 small potatoes
4 cups cauliflower
3 garlic cloves
4 tsp light margarine
4 oz shredded cheddar cheese

Brown beef and add seasonings, beef broth and veggies. Simmer until veggies are tneder. Turn heat to low and add tomato paste, let thicken. Pour into casserole dish. At the same time you can have your potatoes, cauliflower and garlic boiling until soft. Mash all together, then add margarine and pepper to taste. Spread evenly over beef and top with shredded cheese.

Serve 4
1 serving = 1 protein, 1/2 free exchange, 2 veggies, 1 fat, 1 dairy, 1 starch


Variation - Mushroom Sheppards's Pie
2 cups sliced mushrooms
1 cup sliced onions
Fry in pan sparyed with pam till tender. Pour over top of meat before potato topping. Add 1 veggie to your serving.

Shipwreck Casserole

16 oz lean groud beef
4 small potatoes, sliced
1 cup sliced carrots
2 cups chopped cabbage
2 cups sliced celery
1 cup sliced onions
2 cups hunts low sodium tomato sauce
1/2 cup water
1 1/2 tsp flavomagic
1 tsp each of garlic powder and thyme
1/2 tsp pepper
tobasco sauce to taste

Layer ingredients starting with onion then carrots, celery, potatoes then cabbage. Crumble raw meat over top. Mix tomato sauce, water and seasonings, pour evenly over top. Cover with foil wrap. Cook for 35 mins on 350F, remove foil and cook for another 15 mins or until beef is brown and veggies are tender.

Serves 4

My favourite secret ingredient in everything lately is mustard. Since it is the only condiment we can use!

-2 Eggs (Boiled)
-1 tsp mayo
-1 tsp mustard
-2 tsp chives
-pinch of black pepper

Cut your eggs in half lengthwise, remove yokes, put in bowl and mash with mayo, mustard, chives and black pepper.

Spoon out into the 4 egg white hollows, sprinkle with paprika.

Serves 1
Equals: 1 protein and 1 fat

is awesome with fresh veggies, I make up a little deli plate of my devilled eggs and some mini carrots and cucumber slices.

They taste so good I somehow feel like im cheating!

Thank you for the sheppards pie! I LOVE IT!! and so did my 2yr old so Giant WIN!!!

Biancs - whatever you don't use of the additional servings freeze it. That way if youre having a rough day you have something you can just heat up and go. :)

I know alot of us Cook and Prep once a week and freeze.

2 cups whole wheat pasta
1 cup peppers
1 cup cucumbers
1 cup tomatoes
1/2 cup red onions
1 cup (8 oz.) grated hard cheese
8 tbsp. fat free dressing

This one was a favorite of mine before i started the HM program, and thankfully, its legal!!!

2 Servings

1 Cup cooked whole wheat pasta
2Tbsp EV Olive Oil
1 Cup cubed port0bello mushrooms
1 cup thinly sliced red or orange pepper
I 4 oz can of tuna in water
minced garlic to taste
salt substitute to taste
Tbsp lemon juice

Cook the pasta according to instructions, using the salt substitute.
Heat oil in frying pan and add mushrooms, peppers and minced garlic.
Cook until tender
Add tuna and lemon juice, mix and heat through.

mix with pasta and serve!

Veggie and Meat Lasagna For Two

6 whole weat lasagna noodles, cooked
2c Healthy Choise past sauce
16oz extra lean ground beef
2oz mozza cheese
2oz chedder cheese
1c celery
1c onion
2c spinach
2 garlic cloves minced
black peper to taste
cayenne pepper to taste

Preheat oven to 350F

Cook ground beef and drain

In meadium saucepan over meadium heat combine sauce, vegetables, garlic, and spices. Add ground beef once cooked. Spray loaf pan with Pam cooking spray. Complete the following three layers in order three times: 2 lasagna noodles, sauce, cheese. Bake for 30 minutes.

Makes 4 servings

1 Free Exchange
1 Protein
1 Dairy
1 1/4 Vegetable
