This is always such a great thread and we always seem to lose track of it.

Tonight is tuna/white bean salad in ww pita pockets and this (http://kalynskitchen.blogspot.com/2009/02/recipe-for-middle-eastern-bean-salad.html) middle eastern bean salad from Kalyn's Kitchen.

I'm going to be doing more baking today (for a friend's birthday) so I will try to avoid the temptation of coconut cookies with a passion fruit curd filling. :devil:

I made that salad last weekend :) It's good though I think I need to tweak it a little.

I'm making the broccoli cheese soup with the white bean base, roasted baby bok choy, and veggie burgers

Cyndi - what do you think it needs? I'm always open to suggestions. I'll probably tweak the dressing a bit.

toasted ezikial bread with herbed olive oil, caesar salad and caprese salad. light supper tonight... oh and beany brownies with cool whip for dessert.

I thought about grilling but am crockpotting instead. Once it's warm out the crockpot will go back into storage so might as well enjoy it while it's cool out. I'm mkaing the Tuscan White Bean Stew, http://www.3fatchicks.com/forum/showthread.php?t=162313 with roasted cauliflower on the side.

Twynn - It's just a little bland so next time I will zip it up. I'm sure it needs more garlic ;) also a little more lemon juice.

We're going to a friend's for dinner...more than likely it will be something highly processed out of a box...we always eat before we go so we don't have to eat much there. :(

I got a great deal on some pork tenderloins yesterday, so I'll make a couple of those tonight - haven't decided on the preparation yet. I've got tons of Brussels sprouts left to go along, probably some spinach, and there's rice for the kids.

Last night was mexican with ww burritos and fresh guacamole, tonight will be stuffed portobella mushrooms, although I am not sure yet what I will stuff them with- any ideas?

The family wants spaghetti and meatballs today, but I'm having spaghetti squash with meatless meatballs for myself. And for dessert - fresh strawberry shortcake! I'm setting aside some strawberries for myself that I'll sweeten with Splenda, and use FF Cool Whip, but I'm indulging in a small piece of SF, FF angel food cake. (And I know, it's not OP. :()

Cyndi - I agree that it is a little bland. I added some red onion, red wine vinegar and more garlic and it was better.

Cottage - fresh shortcake sounds ultra yummy.

Tonight is thai chicken wraps. I'll probably eat them in lettuce cups because I had oatmeal for breakfast.

Rikki, I scraped out the gills when I make these. You'll love this recipe, it's so yummy. :)

I second scraping out the gills - not because of a flavor thing, but because there is more room to stuff!

I was thinking of scraping out the gills then chopping them and adding them back in to the cheese along with the stem chopped and sauteed with garlic, thats what I usually do when I stiff regular mushrooms, but I may just follow the recipe as is... hmmmm... I'll let ya know how it goes~

LOL, I just noticed I said when I stiff the mushrooms, lol... Cyndi- I usually chop the insides back up and chop up a big handful of spinach sautee with garlic then mix with parmesan and stuff them- but when I make stuffed shells or anything I always use mushrooms, spinach, garlic, ricotta, mozz, and parm- so I think I will stuff my mushroom that way and stuff DH's the original way you posted! he's not as big on spinach as I am..

Cooking a pork chop and cabbage recipe from Pierre Franey’s Low-Calorie Gourmet. I last tried it in 1999 and before that it was 1984! My notes in the book all say it was really good - we'll see. I plan to have it with gingered carrots.

I did end up making the mushrooms as the recipe called for and they were good- Next time I will put a few fresh basil leaves under the tomatoes for an extra kick! I think they were a bit bland and it was my fault... I made the stuffing but for just two mushrooms so the ricotta took over :) They were yummy though!

Tonight I am trying the baked falafel- I am pretty sure someone else was baking it too- I am using the kalyn's recipe maybe we can compare ;)

Pork chop last night was a bit dry, maybe because it was only one chop and in a largish casserole. I'll try the recipe again and post it if it's not dry.

Tonight will be Taco Bake with spinach or lettuce or cabbage.

I made felafel this morning and planned to have a nice supper with it, but I had to work until 7 tonight, so I just threw together a fast supper of felafel with yogurt tahini sauce and some raw baby carrots. It was delicious, though!

I made the Fireside White Bean and Sausage soup, with a package of chopped spinach stirred in, and topped with grated Parmesan. It hit the spot because it has turned chilly again!

Yoga night special - quick and not too heavy - sauteed greens (Trader Joe's Southern Greens mix) with a little soy sauce and sesame oil and tossed in some smoked tofu. Now I'm eating dried apples for dessert :)

IF I get home at a decent hour this evening, I plan to have roasted asparagus with my felafel and tahini sauce.

Cyndi, that recipe for the felefal is fantastic, and I like the fact that it's so good baked in the oven, rather than fried. I'll be making it often. :)

I'll be at work so it will be a salad with tuna for me.
Need to fix something for the guys, maybe lay out a pack of venison cube steak for dh to fix when he gets home.

I think I'll do the spaghetti squash pie tonight. The kids won't eat it so fish sticks for them.
Everybody's been having fish tacos lately, I need to plan that for next week. I also need to check out the felafel recipe!

Cottage- glad to hear the falafel is good! I have it in the fridge chilling, and going to make it for dinner... of course, I didn't season it exactly like it said- I didn't have a onion so I used green onions and some onion powder! I hope they are good!

they turned out good- I liked them with some TJ's cilantro dressing! I didn't have any yogurt to make the tahini dip with- did you make that also cottage?

Hubby made his famous Moroccan Chicken tonight. He normally makes a mint and yogurt sauce but it didn't turn out so he just made a tzaziki (??) sauce. Yum, yum, yum! I'll find out where he got the recipe and then post it.

Oh my! My supper last night was yummy!!

WW tortilla...smear with touch of guacamole +/- sour cream, slices of broiled chicken breast, a few spoonfuls of that black bean and corn salad I posted the other day, and then a romaine lettuce leaf and roll up. YUM!

we have mushrooms that have reached the must use status. I'm not sure but am leaning toward a veggie stroganoff on steamed cabbage.

chickpea daal; brown basmati rice; roasted asparagus

sf ww chocolate cake with peanut butter frosting for dessert (check the phase 2 dessert section). The frosting is great. DH asked if I was sure this was allowed on South Beach and then looked at me skeptically when I told him yes. I think he thinks I'm lying to him! He glanced at the computer screen where I was getting the recipe from and saw that it was the forum and looked satisfied.

He's serious about not letting me cheat! I'm wondering if I'll regret telling him to not let me!
