I really enjoyed the last one so maybe we could do this monthly since it doesn't get as many posts as the dinner thread, but I love to get new ideas for breakfast!!!!

today was 2 eggs with 2 veggie sausage links scrambled and topped with fresh salsa! yum!:carrot:

I don't like eggs, so oftentimes, my breakfasts are quite strange.

Today, I had beans and yogurt for breakfast. :yikes: - not mixed together, but separately, of course.

This morning was whole wheat bagel crisps with swiss cheese.

I gag over eggs unless they are baked like a quiche- no idea why this is. So I had a slice of breakfast square reheated- basically just eggs, spinach, feta, red pepper, onion all mixed together and baked without a crust, in an 8x8. I need to have something more filling than that, but I was out of cut veggies for a side :/

I had two hard "fried" eggs, one slice of bacon, and a leftover whole grain pannycake. YUM!

(I eat a bit more for breakfast on my long run days...)

oatmeal with Splenda, cinnamon and sliced banana and a glass of skim milk with SF coconut syrup added.

Broccoli omelet with cabot 75% reduced fat cheese (that's 2 cups of sauteed broccoli and 1 egg - I'm not a huge egg fan ;) I had a small Nessa bar for a mid morning snack. Did you know you can put cocoa in those things?!

This week is one of two options. It'll either be an Oatmeal bar w/ yogurt or 2 ortega chili & cheese egg muffins.

I have been eating "protien pancakes" for breakfast the past week, and they are soooo yummy!! I was skeptical but they are good... 1/4c ff cottage cheese, 1/2 c oats, 1/2c egg whites/substitute, dash of cinn and vanilla (all blended together) very good for a nice filling breakfast!

Hot oat bran cereal with splenda, cinnamon, a Tbs of almond butter, and vanilla unsweetened almond milk. And spicy V-8 juice.

today was oatmeal with tbsp walnuts and 1/2 of a 1/2 square of unsweetend chocolate shaved - oh soo good!

Cyndi - they turned out really yummy. And they're super easy to make.

4 eggs
1 small can ortega chilis (chopped)
1/2 of a small can black olives (drained & sliced)
1/2 c. cottage cheese
2 green onions (sliced)
1/3 c. shredded lf cheese
S&P to taste

Mix all together, it makes about 6 muffins.
Bake @ 350 for 15 min.

I find that they freeze well also.

Thanks Heather! They are now on my weekend cooking list :)

I had kale & eggs for breakfast. The kale is just perfect now that we've had a couple of freezes. Yum!

I tried these this morning. They were pretty good but next time I think I need to add a little more ... shoot, I just looked at the recipe. I was thinking they needed more chili and sure enough you listed a whole can and I only used half. Well that explains that.

Thx again for sharing, I really enjoyed them and they were quick and easy to put together.
