I don't have any recipes but a girl from work said that instead of vegetable oil or butter you can use Apple Sauce??? I never tried it but she said it works out well and you cant taste it.

Spenda for sugar, maybe whole wheat flour? You can go on hungry-girl.com and see what substitutes she uses. She doesn't have cake recipes, but there are some for cupcakes.

I guess there really is no such thing as "healthy cake" haha, but things like splenda and applesauce can make you feel a little less bad.

Here's an old Weight Watchers recipe that's always a big hit... Of course it's probably true that there is no real healthy recipe, at least it's better than a lot of alternatives.

Box yellow cake mix (sorry if you want to go from scratch, but this is good!)
2 (11 oz) cans mandarin oranges (substituted for the water)
4 oz applesauce (substituted for the oil)
subs. egg beaters for the eggs (whatever the proper equivalent is)

Mix that all up, but fold in the oranges last

bake at 350 for 30 minutes

For frosting, mix together a tub of fat free cool whip, a can of crushed pineapple (with the juice) and a box of ff/sf vanilla instant pudding

This cake is soooo delicious! I make it for every occasion I can, and there is never any leftover!

Auntie G that sounds INCREDIBLE. Ohhhhhhhhhhhhhhhh woooow. So do you strain the oranges or just dump the whole can in?

Could you make apple crumble instead? That's easy to do low-fat.

Don't drain the oranges, dump 'em in, juice and all! Oh, it's good...

I've been using applesauce instead of oil for YEARS! I get asked for recipes all the time, and no one has noticed a difference, other than my cakes/cookies are never greasy or oily. Just substitute the same amount of applesauce for the oil. I use unsweetened applesauce. Hope this helps

Thanks for some of the ideas... May have to use them in the future! I do agree there probably isn't a healthy cake out there... I wish though!

I think she means lower fat/calorie.

I'm pretty sure sponge cakes are the least offensive

Default I have...

A recipe for vegan Carrot Coconut cake, i'll post it when I find it.

Other than that, instead of shortening or butter substitute with NO SUGAR ADDED apple sauce, and don't even attempt to use Splenda for baking. Sugar in cake recipes is essential for volume and texture. Splenda will not work unless you want a pastry that you could bounce like a superball off the floor and tastes like a burnt sweetened plastic flip flop.
