Cauliflower "Potato" Salad!!!
Ok, maybe this is a trick I've missed along the decades of switcheroo tricks for healthy substitutes but I've just discovered making potato-type salad with cauliflower - holy crap it's AWESOME.
I mashed a boiled egg, threw in a dollop of ultra low fat mayo, 2 cups of cooled down, steamed cauliflower, a pinch of dry dill, couple of tablespoons of chopped green onion and some pepper, mixed it all up and voila!
With all the different ways you can prep potato salad you can add any twists and flavours you like, the key is the right cooked texture of the cauliflower.
