Default Quick and Healthy Meals

I looked in the food section, but it seems like many of the options that are posted are for family sized meals. With this being the 20-something section, I'm sure SOME of you are cooking for just yourselves or for you and one other person. What are some of your favorite easy meals and snacks? Please share!

Bean and Cheese Quesadilla

Ingredients:

-1 can fat free refried beans (1/2 cup=105 cals, 0g fat, 22g carbs, 7g protien)

-Processed (Slices) of American/Chedder type cheese ( 1 slice= 30 calories, 0g fat, 3g carbs, 5g protien)
**or shredded if you can find it FF

-Whole Wheat Tortillas (depending on tortilla brand, approx. 85 calories per tortilla, 1g fat, 23g carbs, 3g protien)

-Fat Free Sour Cream (2 tablespoons= 25 calories, 0g fat, 5g carbs, 1g protien)

-Pam (0 calories)

-Salt and Pepper to Taste

-A dash of Cayenne pepper if you like things spicy

Optional Sauce in place or in addition to Sour Cream:
Mix 4 Tablespoons of FF Mayo, 3 Tablespoons of Ketchup, and 2 tablespoons of Mustard. Add one teaspoon of Salsa, then season generously to taste with Season All, Salt, Pepper, and a bit of sugar.

Preparation:

Heat beans on medium heat (or microwave if you prefer). Add salt, pepper, and cayenne as they heat up.

Heat up a large skillet on low-medium heat as beans cook.

Cover tortilla with small pieces of sliced cheese (1-2 slices depending on if you cover half or all) It does not have to be covered throroughly, as the cheese will melt together. When beans are ready, cover half of the tortilla with desired amount of beans. Fold over the other half of the tortilla to cover the cheese and beans. Spray heated skillet with Pam, and place folded tortilla on the skillet. Cook one minute per side (recoating the skillet with Pam when you turn it), or until cheese melts competely.

Now just add Sour Cream, or whatever you want and enjoy!

So it comes out to about 265 calories (1/2 cup beans, 2 slices of cheese, 1 tortilla, 2 Tablespoons of FF Sour Cream)

You can also add chicken or steak to make this even yummier.

Fish fillet (Hoki in this case) with smoked paprika sprinkled over microwaved for 5 minutes and set aside to continue cooking through

Mixed frozen veggies also microwaved and some sweet potato with a little sweet chilli sauce

Takes all of 10 minutes to prepare, cook and have on the table

Bean and beetroot salad

1 can mixed beans (mine usually had kidney, pinto, butter & cannelini)
1 x can whole baby beets (I cut them in half)
A dash of worcestshire sauce and sweet chilli to dress
Handful of mixed green leaves

Toss and serve!

* Grilled Salmon steak with Steamed mixed veggies

Same as fish dish above only grill the salmon and serve with mixed frozen veggies (or whatever you like)

*Individual sheppards pie

400gm lean mine
1 x onion
garlic
worcestshire sauce
oyster sauce
HP sauce
mixed herbs - all to taste
Grave mix and cornflour (enough to make a thick consitency in the meat mix)
a little bit of beef stock (I use powdered)

Chop and cook up and while the meat is simmering microwave or boil enough potatos to make a decent mash covering

Divide the meat mix among 4 ramekins and rop with the potato...bake in oven about 30 mins or till topping is crispy.

You can freeze these little guys - they're great as dinners or lunches

english muffins pizza

ingredients:
whole wheat/honey wheat english muffins
pasta tomato sauce
low fat/fat free shredded mozzerella cheese
green/red peppers (cut these into small pieces)
fresh cut mushrooms
olive oil
oregano, black pepper

directions

-take one english muffin, split it in half, put it in the toaster until brown
-once the muffins are toasted, drizzle a little bit of olive oil on both muffins
-put 2-3.5 tablespoons of pasta tomato sauce on the muffins
-put 2-2.5 tablespoons of shredded mozzerella cheese on both muffins
-sprinkle a little bit of oregano and black pepper
-add the cut pieces of peppers and mushrooms on top
-drizzle a little bit of olive oil on each muffin
-place the muffins in the toaster (the small toaster oven type, if you don't have one of those, just put it in the microwave for 45 secs to 1 minute, or until cheese is melted)

This is a family-sized meal, but it's GREAT leftover. I can make a pot of it and have enough leftovers for 1-2 meals bewteen DH and I.

Quick and Easy Chicken Tortilla Soup
- Give or take 1/2 bag of Tyson cooked Southwest Seasoned chicken breast strips (3 oz have about 3g of fat).
- 1 box of Swanson lowfat chicken broth
- 1 can italian diced tomatoes
- 1 can rotel tomatoes (diced tomatoes with green chile)
- 1 cup brown rice

Put first four ingredients into large pot. Let simmer on medium heat for 10-15 minutes to reduce liquid. Bring to boil. Add brown rice, reduce to medium-low heat and simmer for 15 minutes. Season as preferred (I add a little garlic powder, onion powder, pinch of salt and pepper). Serve.

Occassionally I'll add things such as black beans, corn, etc. But this meal is quick, only requires one pot, and makes great leftovers.

Here is a couple of my regular meals. I will often eat the same thing for two days because I end up with leftovers when cooking for one.

I grill chicken on my george forman a lot and then serve it with veggies and rice. Another thing I make a lot is chicken legs or thighs without the skin and bake them for like a hour with seasoning salt and sometime add bbq sauce.

Stir fry is another great option for one and you can put tons of veggies in it.

I buy the small jars of pasta sauce and make single servings of pasta, add either chicken or ground beef/morningstar fake ground beef, and veggies.

In the winter I made soup a lot and would have soup and sandwiches.

Foil packets made out of aliumin foil with chicken, fresh veggies, add a little big of water some seasonings and bake for 45 minutes.
