Question Taco Bake and Roasted Chickpeas

I made the Taco Bake recipe last night. My DH LOVED it!! The only prob is he doesn't like leftovers so, can I freeze what is left or would that ruin it?

Also, I made the roasted chickpeas and added cumin, chili powder, garlic powder, pepper and salt. Well, I baked them for 40 mins and turned every 10. They didn't turn out very crunchy and all the flavor baked off of them. What did I do wrong?

Taco bake freezes beautifully!
The chick peas don't turn out really crunchy for me. I find drying them a bit with a teatowel (or paper towel) after rinsing helps. I also always add a tiny bit of oil to get the seasonings to stick better.

Thanks Ruth! I will freeze the rest of that Taco Bake. I dried my chickpeas but I don't guess well enough and then used olive oil. Guess I will try it one more time and see how they turn out!

i don't turn them... (the chickpeas)
i put them in a big roasting pan with my oil and spices
and after the first stir (to loosen them from the pan) I SHAKE the pan
when they rattle they are done (can take a long time)
then i put them back in the oven and turn the oven off

and l let them cool in the oven... overnight if possible.

I will try those tomorrow. I mentioned them in passing tonight to kind of fell the water with Tom and he got all excited and told me to make a double batch because he just *knows* he'll love them!

What Is It With Husbands Not Wanting Left Overs. Mine Is The Same Way And I Love Them. Which Means I Will Always Have Something For Lunch!!!!

We eat leftovers all the time...with 2 to cook for it's almost inevitable!

I am SO excited about making taco bake this week. It's been a long time since I had it!

I LOVE taco bake and haven't made it in awhile. Might be time to fix it again. My DH doesn't like beans but what I do is make part of it without the beans which means that Brian and I get more beans and DH gets none. And then it makes great leftovers. It freezes really well too.
