Impossible Pumpkin Pie-SC
Ingredients:
1/3 cup sugar
1/3 cup Splenda
1/2 cup reduced-fat Bisquick®
1 (13 oz) can evaporated skim milk
2 eggs
1 (16 oz) can pumpkin, no added salt
3 tsp pumpkin pie spice
2 tsp vanilla
Preparation:
Preheat oven to 350°F. Coat a 9 or 10" pie plate with cooking spray.
Beat all ingredients with a hand mixer for 3 minutes until smooth. Pour into pie plate. Bake until knife inserted into center comes out clean, about 50 to 55 minutes.
Garnish with fat-free whipped topping, as desired.
Makes: 10 servings
Serving size: 1 slice with 1 tbsp fat-free Cool Whip®, as desired

This tastes like regular pumpkin pie! The bisquick makes kind of a crust all around the insides.
