KO, Small world!! Camped at Harmony Ridge dozens of times! It is one of the nicest around Stokes...Last time we stayed in one of the cabins.. it was pouring buckets and we just thought this is too silly, lets just get one of the cabins.. it was so nice to be warm and dry! We also saw a bear last time... We kept our distance, but it was an awesome sight.

No Fair we didn't see any animals at all (Could be from the kids across the way blasting Really bad Techno)I'd love to do the Cabin but DH wanted my first time camping to be fully outdoors While I would have loved to have a bathroom on site it was great! the People were so nice too!

KO - I checked and I don't see the Peking Pasta with Chicken recipe. I'll have to remember to post it when I'm home so I have all the correct instructions. I'm not sure if it is truly phase 2 or 3 they way I make it but I do know a way to do the sauce to where it would be phase 2 so I will probably give both versions. I just love all the veggies in it!

We have been having a wonderful day. It's been quite wet in Charleston/Goose Creek today but Brian and I headed out to Cypress Gardens this morning after one shower. We ducked into the aquarium and reptile house during the next shower after seeing the butterfly house. Then when the rain had pretty much stopped, we headed out for an hour long nature hike. It was a bit muddy but a lot of fun. We saw tons of butterflies and heard lots of frogs. Then we got a flat bottomed boat and went rowing on the lake for about an hour. Brian had never rowed before and its been close to 30 years since I last did but we got the hang of it quickly. Lots of fun and not too hot for this time of year.

Evening chicks!

Just a quick check in as I am exhausted! Kids came back to school today- pretty uneventful. The are always nice and quiet the first day back- I will enjoy the "honeymoon" period as we call it!

Barb I am so glad to hear that you are enjoying your trip.

I totally blew Phase 1 on Saturday night. DH and I had a blast though! I have restarted Phase 1 as I think I ate way too many nuts the first week and didn't lose much. Yesterday and today have been perfect eating. I made the Chicken Divan from the recipe thread last night. It was so good! Even DD liked it. Dinner tonight was Cod and some roasted veggies. It didn't trun out too fabulous, but at least filled us up.

I am off to bed- It is only 8:00 here, but I am going to take advantage of my husband being home and let him stay up with DD for a bit! I have two really good books to read, but I can't seem to get too far!
