I'll post a few days to give some additional ideas. I'm in Phase 2.
Last night - Whole wheat lasagna with extra lean ground beef (98%), zucchini and spinach
Tonight - Grilled Tilapia, rice (Uncle Ben Converted), green beans with reduced-salt soy sauce, ginger and crushed red pepper.
Tomorrow - Whole wheat pita bread with pizza sauce, RF mozzarella, turkey pepperoni, onions and mushrooms. I'll double up on veggies at other meals since this won't be a full 2 cups of veggies.
Wed - Pork Tenderloin, rice, brussel sprouts (cooked in turkey bacon and a little chicken broth)
Thurs - Chinese 5 Spice Chicken, broccoli, lima beans, toasted pita triangles with a little garlic and Smart Balance.
Friday - Cub Scout Award dinner - no idea of the menu
Saturday - Jambalaya (ham) and a sweet potato.
I'm doing phase 1 right now, so today I had peanut butter pie for breakfast and a big salad with a serving of taco bake for lunch. Both items were very filling so I didn't have any snacks.
To add balance (read: more veggies!) dinner is a big bowl of capanata (sp?) In other words, sauteed veggies Italian style!
I just finished preparing Stuffed Pork Chops, and they're all ready for the oven. I was going to fix green beans with them, but now I'm leaning more towards "Surprise Mashed Potatoes" and a salad.
NOTHING, damnit!! I've already eaten my quota for the day. What's with this eating like a pig all morning until I'm bulging?! I'm sitting here with my jeans undone.
Crap.
Maybe I'll have some coleslaw later and a couple of coffees to perk me up.
Oh, Ellis, don't punish yourself that way, darling! I did that last night and lay in bed with GERD and a sorry heart. Hope you can spend the evening cuddling with DH and trying to feel better.
DH is having the Turkey Breast (Italian thing, begins with a C?) for dinner. I made the crockpot version from Entrees, Phase 1, but with cut up chicken breast, since we have tons of that in the freezer. I'm having chicken breasts, a salad, and some kind of side veggie, if I can find one...I'll be eating in the cafeteria.
A broad, just because the meals were big doesn't mean your blood sugar stays stable. Eat those snacks, girlie!
Here's the reason.....or my excuse to just not make dinner
~I didn't take out the pork chops till this morning and when I got home they were still frozen
~Matt doesn't get off till 6 so he won't be home much before 7
~We have a dance recital to attend at 7......I'm thinking we'll probably be a tad late
~I don't want to have a late dinner.....it'll interfere with my exercise time and the Bachelorette
So, for the time being I'm perfectly content with my scrambled eggs and V8. Maybe I'll have a salad when we get home.
We had Salad for dinner, but we decided last week to try eating our main meal at lunch and salad at night because we get home late from the gym... First week was relatively successful, and I just have to lose 2 pounds to make my January Goal! So for lunch we had meatballs in sugar free spaghetti sauce with a light dusting of lf mozzerella... and greenbeans ... Must make up for being a major party animal last night and going through a WHOLE bottle of wine with dinner ... I paid dearly today my head pounded till like 5!! I keep hearing about this PB pie... I really MUST check it out!
