Hi everyone! yes I managed to stay OP today. I haven't had too much to eat today because that beef wellington last night was incredibly rich with the beef and liver pate and all the butter on the veggies I'm kind of full.

Still.

I didn't get the runs from eating the chocolate fondue last night - I didn't eat much but ususally sugar runs right through me, literally. DM said that sometimes a tremendous amount of protein can balance a little sugar and keep the impact on your bloodstream low. Let's hope that is the case.

Sausage and Cheese Breakfast Cups
4 oz turkey sausage or crumbled turkey bacon
1/2 green bell pepper chopped
1/4 onion chopped
5 large eggs
1 can (12 oz) sliced mushrooms drained
1/2 cup (2 oz) shredded reduced fat cheddar cheese
Preheat oven to 350 degrees F. Coat 6 cup nonstick muffin pan with cooking spray or line with paper baking cups.
In a medium non-stick skillet over med-high heat cook the sausage, pepper and onion for 5 minutes, or until the sausage is no longer pink. Spoon the mixture into a bowl and cool slightly. Stir in the eggs and mushrooms. Evenly divide the mixture among the prepared muffin cups. Sprinkle with cheese. Bake for 20 minutes or until the egg is set.
