Have you ever had Kyrui Su at a sushi place? It's always been one of my favorites, diet or no diet. Here's my own version. The only part I'm not sure about is the sesame seeds, but if they are "illegal" they can be omitted. They add a nice extra dimension to the flavor though.
2 medium cucumbers
approx. 1/2 cup rice vinegar
lemon juice to taste (I use about 1/2 a lemon)
bit of lemon zest
1/2 teaspoon toasted sesame seeds
Artificial sweetener to taste (I use 2 packs of Equal)
In a bowl mix the vinegar, lemon juice, zest and sweetener. Peel the cucumbers either clean or with stripes of skin left on them if you prefer. Cut them lengthwise and use a small spoon to scoop out the seeds and pulp, then slice them across, so the pieces are in a cresent shape. Toss the cucumbers in the vinegar mix. At the very end, add well toasted sesame seeds. Try eating them with chopsticks! Very fun.
Best if served immediately, but if you want to make it ahead you can. It will keep best if you take the cucumbers out of the excess dressing for storage. Leftover dressing can be used again (if you don't eat right out of the serving bowl like I do :wink
