Barley Salad with Fresh Mint
1 cup of COOKED BARLEY
1/2 c. CHOPPED GREEN ONIONS
1/2 c. DICED RED BELL PEPPER
1/4 c. FLAT LEAF PARSLEY, CHOPPED
1/3 c. BASIL, CHOPPED
2 Tablespoons MINT LEAVES, CHOPPED
1/4 c. LEMON JUICE
1/4 c. RED WINE VINEGAR
1 clove GARLIC, MINCED
In small bowl, whisk together vinegar, garlic and lemon juice. Drizzle over barley, onions, peppers, parsley, basil and mint in a large bowl. Mix and serve at room temp or cold.
