  • mandalinn, mine varies a lot too. There isn't really a typical day, you're right. But generally, I cook as much as I can, I'm vegetarian, and I eat more fruits and veggies than anything else.

  • Mmmm, that tomatilla salsa looks great!!! I am def going to make it. What do you usually eat it on/with? (I'm not in maintenance but I peeked in and had to say something, hope you all don't mind)
  • No problem Nikki I put it on everything! I made black beans and rice and put it on that... I made enchiladas and put it on that... I even bought some chips (abnormal for me)- blue corn chips & stuck with the portion size of 10 chips. Oh, and I put it on salad! I make my own kind of "taco salad" - lettuce, tomatoes, peppers, whatever other veggies I have around (avocado!) and then black beans (you can use canned if you don't make your own, just drain and rinse them first) Cheese if you want (but I try to eat as many vegan meals as I can) Corn is good in it. Salsa is the "dressing"! Can be very low cal/healthy.
  • I just loved your visusals (do you want to come cook for me? ) and can relate. I always thought I ate healthy until I really started looking at what I ate.

    Oh, and I drink a lot of caffeine still. I work, have a young child and it's the only way I stay awake. I just put some milk in it or drink it black so it barely adds any calories.

  • Great collages. I like that (most) of the 'before' pictures of foods don't make me crave (I am in the coffee club, though ;-) )

    The later pictures are the ones that look so appealing!
