I didn't follow a recipe, just threw in what I had



I put it on everything! I made black beans and rice and put it on that... I made enchiladas and put it on that... I even bought some chips (abnormal for me)- blue corn chips & stuck with the portion size of 10 chips. Oh, and I put it on salad! I make my own kind of "taco salad" - lettuce, tomatoes, peppers, whatever other veggies I have around (avocado!) and then black beans (you can use canned if you don't make your own, just drain and rinse them first) Cheese if you want (but I try to eat as many vegan meals as I can) Corn is good in it. Salsa is the "dressing"! Can be very low cal/healthy.

Don't get me started on how much I love exercise now!
