Default Cauliflower gratin puffs

I made up this recipe based on one I've used in the past for mashed potatoes

1.5c of steamed cauliflower puree
2 eggs
1/2c of low fat cottage cheese
chopped chives
salt and pepper to taste

Preheat oven to 350. steam cauliflower. Puree with immersion blender or food processor. I used one small head of fresh cauliflower which gave me 1.5c of puree.
Mix in cottage cheese, chive and salt and pepper. whip eggs with whisk or hand mixer until light and fluffy. add to cauliflower mixture.

Spray muffin tins with non-stick cooking spray. spoon mixture in to fill approx 2/3-3/4 full. Bake for approx 30 minutes until browned and fluffy. Makes 8-10 puffs.

I tried these last night, and I wasn't particularly successful. For one thing, the tops never really browned. I kept adding 5 minutes to the timer in case my oven was just a little underpowered, but after doing that several times I realized the tops were never going to become brown. Then, I couldn't figure out how to successfully remove the puffs from the muffin tin. Even with spraying it beforehand, I couldn't get them out in one piece. I was left with cauliflower gratin mush lumps, and it didn't taste *bad*, but it certainly wasn't as good as cauliflower "mashed potatoes". It was awkward. If someone can shed more light on cooking methodology, I would try these again. =]
