It's true that you want to cut down on carbs, but one of the points about SB is that it emphasizes cutting out bad carbs over good (the difference is explained in the books). Nutrition labels break down carbs into categories: fiber, sugar, sugar alcohol (which is generally considered not problematic overall), and other carbs. Look at the ingredients as well. If there's high fructose corn syrup, don't eat it. Foods that have fiber are good -- our bodies need fiber. Plenty of food that's good for us will contain some carbs and that's okay. The point is, esp. for phase 1, to limit your total number of carbs and up your protein intake. Then, in phase 2, you'll learn how to reintegrate good carbs, like whole wheat and brown rice.
