I like cottage cheese or protein smoothies for my quick breakfast mornings. If I plan ahead, I make egg muffins (eggs and meat and cheese and veggies mixed all together and baked in muffin tin) or Scotch eggs.
I eat eggs (in many ways) on my more leisurely breakfast mornings.
If I go out to breakfast, it's usually Eggs Benedict and I don't eat the English muffins, or a nice omelet or ham steak.
Lately my favorite is a 2 egg omelet, with 100g of spinach and 2 Tb of chive & onion cream cheese.
Beat eggs, pour in non stick pan sprayed with Pam. While omelet cooks, heat up spinach (i use frozen) in microwave for about 30 seconds. Then add cream cheese to spinach and heat another 30 seconds. When omelet is done, add spinach/cr ch mixture, fold, plate, and ENJOY!
7 CARBS, 253 CALORIES. Very filling (and you can always make it a 3 egg omelet if you want more for a mere extra 70 c)) and quick to make.
Cottage cheese, 70 gm of berries, 1 tbs of almond butter 224 cal (15 gm of carbs). I do not know what you are considering as low carb. For me this is low carb.
Breakfast for me:
left overs meat and veg from the night before.
Left over greens like swiss chard or something, with 2 over easy eggs on top!
3 sliced cooked bacon (from a previous day) and a hard boiled egg
Half an avacado, with 8 med cooked shrimp and lemon juice
blueberries with heavy whipped cream and a sprinkle of cinnamon
Curry soup (mushroom, caulif, onion, peppers, coconut milk and curry paste)
You might see a trend here, I never eat before I leave the house, if I do eat breakfast then it is like 10am from my desk and it is left overs from the night before. Usually if I have had enough protien and fats in my evening meal I dont get hungry at all until around 2, then I might just have a handful of nuts and then go home to a rib eye, and some greens with bacon.
Disclaimer: MANY lo carb diets have you eating grains and low fat......tried it for years, does not work for me, this is the Primal diet, eating whole foods, meat, eggs, veggies and fruits
Thanks synger for the links! I've been having a hard time with breakfast because I don't eat at home in the morning. I usually take my breakfast around 9:30 at work. I like eggs, but I hate trying to go in the kitchen late in the evening and make them for me and my husband every other day. The muffins look like the answer to my problem.
