Whip the egg whites, water and vanilla until they are foamy (not stiff)
Pour over pecans in a large bowl
Add dry ingredients
Stir Well and place in a single layer on a cookie sheet
Bake in 350 degree oven for approximately 45 minutes or until crunchy stirring frequently.
My husband and I LOVE these. He can eat his way through a lb. in no time.
I made these last night and they were great. We all really liked them. I didn't have any problem sticking to the limit of 15 though because they were a little sweeter than what I am used to. Thanks for posting!
I am also from the south and these are sooooo yummy!! My entire family loves them. I do have to watch how many I eat because I can eat way more than 15 if I am not careful!!!
This recipe is absolutely delicious. I only had to bake mine for about 30 to 35 minutes. Could just be my oven though. These are just as tasty as my local mall's. Thanks so much for the recipe!

I LOVE pecans, especially sweet ones. I got some pecans at the store tonight, so I'm about to try these. I am going to have to work hard at only eating 15 at at a time!
These are soooooo good! While munching some of my first batch, I had a thought and decided to try it on my second batch -- I swapped out 2 of the Tbsp of cinnamon for 2 of Coaco powder. I come from a long line of chocoholics and they turned out pretty good, if I do say so. The cinnamon gives the chocolate a little kick.

Well I made them last night and, although they were good, I *still* haven't found anything that tastes as good as the candied pecans from River Street Sweets. Of course, those are loaded w/ sugar and carbs and anything else you can think of that's bad for you.
OK...my sister-in-law made these and followed the recipe posted here but they burned so bad!!!! She says that cinnamon burns easily and this was way too much cinnamon....so I found another recipe that is very similar. They are baking now and my house smells amazing!!!! Here it is:
Candied Pecans
1 lb. pecans
1 cup splenda
1 tsp cinnamon
1 tsp salt
1 Tbs water
1 large egg white
In a small bowl mix sugar, cinnamon and salt. In large bowl, put water and egg white. Beat to a froth with a fork, but not stiff. Mix pecans with egg whites until coated. Add sugar mixture and stir until sugar is all used up.
Spray a baking sheet with nonstick cooking spray. Spread nuts on baking sheet. Bake at 300° for 45 minutes, stirring every 10 minutes.
** I did add a touch of vanilla to the egg/water mixture***
