I realized later yesterday that I hadnt eaten hardly any veggies so I started digging around for something to make and came up with a really yummy entree...very filling and flavorful. It filled a 10 inch dinner plate.
1 small eggplant diced
12 oz sliced mushrooms (not canned)
1/4 diced green pepper
Minced onion (or diced fresh if you want)
garlic powder
17 slices turkey pepperoni
Cracked pepper
Sea salt
1 tbl evoo
reduced sodium FF beef broth
I sauted all the veggies in olive oil and then added the beef broth and cooked everything until softened to my liking. I also had SF spaghetti sauce and mozz cheese on the side ready to put on top but after tasting, realized the dish was fine by itself and I didnt need anything else. I took a pic to share..
