Easy Southwest Taco Salad like Wendy's (7.5 pts)
I didn't know which category to post this in, so I am posting it under the general thread. This taco salad is just like Wendy's southwest taco salad. You can reduce the points count by 2 pts if you leave off the tortilla strips. This is really filling!
Easy Southwest Taco Salad (like Wendy's) (1 serving)
1/2 small tomato, diced (0 pts)
4 Tbls Fresh Gourmet Tortilla Strips, Santa Fe Style (seasoned tortilla strips) (2 pts)
7 ounces turkey chili with beans (3 pts)
2 1/2-3 cups romaine lettuce, chopped (0 pts)
1/8 tsp ground chipotle pepper (0 pts)
1/8 tsp ground ancho chili pepper (0 pts)
2 Tbls salsa (0 pts)
1/4 c fat free shredded cheddar (1 pt)
1 1/2 Tbls Hidden Valley light ranch dressing (1.5 pts)
In a small bowl, combine ranch dressing, chipotle pepper, and ancho chili. Let set at least 15 minutes to blend flavors. Meanwhile, heat chili.
In a big bowl, put lettuce, then chili, cheese, tomato, salsa and top with dressing mixture and tortilla strips.
