I was going to cook a batch of brown rice and refrigerate it for my servings the next couple of days. So, I googled, "how long can I refrigerate brown rice" and I kept reading that you should never refrigerate rice because it breeds bacteria very quickly. So, there goes that idea.
I dont have 45 min when I get home from work to make rice...can I use instant brown rice?
I had heard that you shouldn't keep leftover rice for more than three days, but I never heard that you can't store it in the fridge at all. I've eaten five day old rice with no consequences (before I read that you shouldn't keep it that long).
Also, you can freeze rice, which I do fairly often. I put it in a ziploc freezer bag and while it's freezing, I smush the bag around every ten minutes or so (so as it freezes, the rice remains scoopable rather than freezing in one huge clump).
I often cook a batch of brown rice on Sunday, and then I eat on it until about Friday. It tastes fine, and I've never had any problem. In fact, I'm planning to make a batch today. I would rather have it fresh every day, but it's simply not practical for me to do that.
What might help in "acquiring" the taste for it is soaking the rice for 30 mins. I'm not a fan of brown rice usually, but by soaking it, I find it easier to eat
Try cooking it in some chicken or beef broth; it is much tastier like this. Some people do it in tomato juice as well. I think it would make a nice breakfast cereal with the right ingredients like cinnamon, etc.
I have eaten leftover rice from the fridge and freezer; never had any problems with it in my life ...
I freeze it in small freezer bags so I can have a portion at a time. I put it into the bag and then flatten the bags and stack them. I reuse the bags too, because I am frugal like that.
