Default Cauliflower Mock potatoes with a BITE

2 BAGS Cauliflower (cooked)
onions , garlic , hot hungarian or jalepeno
1oz i cant believe it butter
1 oz almond milk

Cook Cauliflower -- saute' chopped onions garlic hot pepper ...
throw all ingredients in and I use a Braun Immersion -- whip until it looks like potatoes

OMG it is wonderful

I eat it everday.. LOTS OF FIBER

Thanks for the recipe! I have been wanting to try some mock potatoes...these must be delish if you eat them everyday, will try them this weekend.

I tried regular mock potatoes last night...but I guess I made them wrong! I had them at my brother's house and LOVED them. Maybe I didn't get them soft enough or something, but the texture wasn't right...then I also used too much liquid. Ended up tossing them. Any tips would be GREAT...

This is my new favorite! I can't believe I spent so much time on SB without trying them. I suppose it might take a little practice to get them the way you like them.

I don't add the additional stuff-too much time for me-I just steam the cauliflower with as little liquid as I can get away with, let it cool a bit and toss it in my Cuisinart with a little Smart Balance. I get it to the consistency I like and then decide if I'm going to add a little liquid. The first time they were great and the 2nd time they were too gooey. I figure I'll keep trying until I have my perfect blend.

Make sure you drain the cauliflower NO WATER LEFT... maybe that is why they were watery
