I baked some zucchini Lasagna using up some frozen tomato sauce, some kind of frozen white cheese?( dummy me quartered it, took the air out and froze without labeling) looked like mozarella and leftover crumbled Elk meat, parmesan cheese, Italiana seasoning and fresh basil. Turned out really yummy plus we had BLT with garden lettuce and tomato. I made peppered bacon for hubby and cardboard turkey bacon for myself.

Today, I used up a can of corn, a can of pinto beans, some canned tomatoes, and the rest of the salsa and some garlic-yogurt sauce in a Mexican-flavored bean casserole.
To bad we can't send each person a sample of all the fantastic meals we're making using up old stuff. Hyacinth...It's true, just like gnawing on cardboard but it tastes pretty good. I zapped some in the micowaveup, snipped it up with my kitchen shears and added to some potato salad. Gave it great flavor.

I turned the challenge into a freezer challenge, it worked! I had lots of 2008 frozen garden veggies in the freezer and I used it all up before re-filling up with the new 2009 veggies. I really need to work on the pantry, I have some old stuff in there. Maybe I'll clean out the pantry, put all the old stuff in front and make that my new challenge.
