Post Shrimp Fried "Rice"

2 lbs. trimmed cauliflower
4 Tbsp. olive oil
4 cloves garlic, minced
3-4 cups diced, cooked meat
3 eggs
1 tsp. salt
2 green onions, thinly sliced
1/2 tsp. freshly ground black pepper



Grate the cauliflower using the medium sized holes of a grater. Grate the core too. With your hands squeeze out as much water as you can. This may not be necessary for some cauliflower as they vary in degree of wetness.

Over high heat, heat the oil in a wok or large heavy frying pan and add the garlic. Stir-fry until pale gold. Add the meat and fry until lightly browned. Break in the eggs and fry until softly scrambled. Add the grated cauliflower, sprinkle with salt and stir and fry until it’s tender-crisp, about 5-8 minutes. The length of time will depend on the cauliflower.

Stir in the green onion and pepper. Check the seasoning and serve.

Default Shrimp fried "rice"

Are you using fresh or frozen cauliflower in this recipe. If it's fresh is the cauliflower cooked prior to grating?

Duh, I haven't gotten around to reading all the recipes, but was scanning a few and there it was, caulie grated and used as rice. So, I guess I'm not very smart! Oh well, takes awhile to get through all the threads. I do not have broad band, so cannot stay on long at a time since puter is connected to land line. Sorry chickies.

The cauliflower is fresh and is grated while still raw. I doubt that frozen would work as well but give it a try.

I used Schmoodle's idea and added extra veggies. I used fake chicken for the meat. I never realized how versatile cauliflower is! DP didn't know it was cauliflower until I told her. We will definitely have this again.

Just made this tonight and my gf, the pickiest eater, actually liked it, mixed it into her white rice and is taking the rest to work haha! had it with some grilled pork chops. thanks twas delicious

Default Just a tip

I used the grater blade on my food processor instead of the hand grater to grate the cauliflower. Life became much better after learning that.
