What are your saviour foods?
This Lent I'm eating no yeast, no sugar, no meat, no dairy. I'm having fun experimenting to find meals that are tasty and nutritious within those parameters. Some meals are still kind of 'interesting', though.
My big saviour was finding a recipe for basic flat bread.
2 oz flour - been using up some plain flour, now about to try some gram flour
a little salt
a lot of freshly ground black pepper
1 tsp olive oil
water to make a very stiff dough.
roll out very thin.
heat a frying pan/skillet very, very hot. no fat.
slap dough on, cook for about 45 seconds, turn over.
great along side chunky soups or veg. curries.
each bread is about 300 cals but if eaten with lo cal veggie stews, soups etc that's ok. if I'm calorie-pressed, I make a half-sized one, just roll it thinner.
It feels a real treat, and is definitely saving me from feeling hard done by.
