ww orzo (if you can find it, buy the store out. It is that fabulous) with tomatoes and red onions sauteed with garlic and olive oil. A little feta, fresh parsley, oregano, and lemon juice mixed in.

Chicken breasts marinated in greek dressing and baked with a little ww panko on top for crunch.

I'm making black bean chili in the crockpot tonight. If I can find any pumpkins at the local market I'll toss one of those in too.

I'd also love to hear more about the chickpea artichoke curry We often ad some Gimme Lean to our spaghetti squash concoctions or toss a couple of Boca sausages in to steam on top.

I got the recipe from the south beach website (i used to be a member) its really quick and easy: saute 1/2 shallot thinly sliced in 1/2 Tablespoon evoo, until tender and translucent. add 1tsp curry powder (I usually use a bit more) and stir together, then add 1/2 can chickpeas. heat until hot, then toss with 1/2 can artichoke hearts (quartered) and about 1 Tablespoon parsley. It takes little more than 5 minutes, and its soo delicious and filling.
