I'm really looking forward to making these ^^ I love a good sweet potato in general, and have been to a restaurant that makes them into homemade sweet potato chips, but have never done this myself.

I do, however, make green been fries! DH and I love them as the side for almost any dinner. More or less the same way - fresh green beans, cut off the ends, toss with a small amount of EVOO and cracked salt and pepper. Lay them flat in the oven, stick in at 350 until they start to brown.

These are so good with seasoning salt and cinnamon. Sounds like a weird combination but its great.

I use the orange sweet potatoes, which are usually plenty sweet all by themselves.

You can use this same technique with Butternut Squash and it's super yummy! I got that idea from Hungry Girl, and it's definitely a fave of mine. I am starting EFS tomorrow and will definitely be doing this with both the sweet potato and butternut squash.
