Default Simple Brown Rice Casserole - Phase 1

I modified an old recipe of my mother's to try and make it work for phase 1... I'm pretty sure this is compliant.

You'll Need:
large saute pan
small casserole dish (8x8 or so)

Ingredients
2 cups cooked brown rice
½ cup vegetable broth
1 tbsp olive oil
½ cup chopped yellow onion
½ cup chopped celery
½ cup chopped green bell pepper
2 tbsp chopped pimento (from a jar)
salt & pepper as needed (not too much salt!)
1 cup grated soy mozarrella (vegan cheese)

Directions

Preheat oven to 375.

Heat the oil at medium-high heat in a large sauté pan and add onion and bell pepper, sautéing until tender. Add celery, pimento and veg. broth and continue cooking until bubbling. Season this mixture with as much pepper as you like and just a hint of salt - as little as possible. Add in cooked brown rice and cheese and stir to mix, then dump everything into a small casserole dish (I use an 8x8 glass one) then bake at 375 for 20 minutes. (Sometimes I'll turn the broiler on at the last minute or two of cooking to get a brown crispy top, but watch carefully if you do this or it will burn!)

I only wound up eating 1 cup of this for dinner, then the next morning I added 2 egg whites to the remaining mixture, pressed it into patties and pan "fried" them with just a spray of canola oil in the pan until brown and crispy. Kinda like hash browns, yummy!

Some other things you can add to this is very thinly sliced or chopped yellow squash and/or zucchini as well as adding a 1/2 c - 1 c of the diced canned tomatoes or the ones w/ green chiles in them for some spices. When I add this I usually can do without the veggie broth & then cook it down awhile longer before putting in the oven. YUMMY! I think I will make some tonight.
