Default North Carolina Caviar

This is a very tasty alternative to a traditional bean salad....I know you chicks will put yer own spin on it... !

1 15 oz can Black Eyed Peas
Approx 30 small manzilla or "Spanish" Green olives, stuffed with Pimento
1 Plum tomato diced
.5 small onion diced
1/4 to 1/2 cup of a LS Italian Dressing (I use Carb option) or make my own.
1 tsp of the juice from the olive jar
1/4 tsp ground black pepper (I use freshly grated)

Drain the Black eyed peas -place in bowl
Chop olives/tomato and onion - add to the peas - mix
Add the olive oil and vinegar based dressing.-- just enough to wet the peas and coat with the OO.. toss.
Add a tsp of the olive juice - mix and add pepper to taste..

cover and refrigerate overnight.

makes approx 4 1/2 cup servings.

It's very filling, A little different at first..and then quite addicting! I usually have it as a dinner side, or as lunch ...with leftovers spooned on WW triscuits
