Smile Hulu Huli Chicken---Hawaiian BBQ staple!!!!

Being from Hawaii, I miss local food sooo much. This is the best grilled chicken recipe I've ever tasted, and no, I'm not biased. Since this is the South "Beach" diet, I'd thought I'd share a little taste of the islands with you ladies. Aloha!

*1- 1 1/2 lbs chicken breast (usually on the bone chicken parts are used but to make it SB friendly just use the boneless breast or on the bone and give the skin to the dog

*1/4 C low carb catsup

*1/4 shoyu or soy sauce

*1/2 C ckn broth

*1/3 C white wine (I saw a P1 recipe in the cook book calling for white wine and this is really only a marinade and basting sauce so I think the wine is OK)

*1- 1 1/2 Tbs pineapple extract (1/4 C frozen concentrate for the other phases--soo good but the extract is Ok too) can use orange if pineapple is hard to find


Mix all ingredients in a bag or bowl and marinate overnight. Grill or bake (I like grilling best) while basting with the marinade. Then close your eyes, picture the beach and some hot local boys doing a hula !!

This sounds awesome...thank you for the great idea! I think I might add a bit of crushed garlic also!!! Yummm!

Good idea shortie! I just thought of something......if you bake instead of grill maybe add some liquid smoke to the marinade?? I haven't tried it but it might be good!

There is a recipe for South Beach ketchup in the South Beach cookbook. You could use that.

Talking Family loved it!

We couldn't find the pineapple extract, but it was great with the orange even. I really want to try it with the pineapple one of these days too though.
