One more point I'd like to made is that in the book, most recipes require cooking don't cook IN the olive oil. In fact the olive oil is suggested as an add on for salad and such so I suspect Gutterson is also well aware of the heat issues with Olive Oil.

Another thing is, PCOS is a specific health issue and many of the endocrine problems associated with it are HORMONE based. I realize this is a Sonoma thread but its also a PCOS thread. Understanding that fertility hormones are MADE in origin from saturated fats is important information.

My point was that Med. People have been using it forever.
And they are healthy people. (or were until west boxed premade foods came into the picture)
My point was not about the recipies in the book. It is very easy to pull info off the net for either side "butter vs olive oil."

It is all about choice and if you are willing to do some REAL research and not just a few net searches. After all it is our life and health so we must do some good reading if we want to be healthy!

Excuse me Ann, but if you're suggesting I don't do real research becaue I pulled something for convenience sake you're quite mistaken. I'd suggest you go to the Weight Loss Surgery forum and check into my credentials a little if you're curious as to my background. There are quite a few there who know my profession.

Cholesterol - Not the Bad Guy!

Every cell membrane in our body contains cholesterol because cholesterol is what makes our cells waterproof—without cholesterol we could not have a different biochemistry on the inside and the outside of the cell. When cholesterol levels are not adequate, the cell membrane becomes leaky or porous. Cholesterol is the body’s repair substance: scar tissue contains high levels of cholesterol, including scar tissue in the arteries.

Cholesterol is the precursor to vitamin D, necessary for numerous biochemical processes including mineral metabolism. The bile salts, required for the digestion of fat, are made of cholesterol. Those who suffer from low cholesterol often have trouble digesting fats. Cholesterol also functions as a powerful antioxidant, thus protecting us against cancer and aging.

Cholesterol is vital to proper neurological function. It plays a key role in the formation of memory and the uptake of hormones in the brain, including serotonin, the body’s feel-good chemical. When cholesterol levels drop too low, the serotonin receptors cannot work. Cholesterol is the main organic molecule in the brain, constituting over half the dry weight of the cerebral cortex.

The adrenal cortex also produces sex hormones, including testosterone, estrogen and progesterone, out of cholesterol. Low cholesterol can disrupt the production of adrenal hormones and lead to blood sugar problems, edema, mineral deficiencies, chronic inflammation, difficulty in healing, allergies, asthma, reduced libido, infertility and various reproductive problems.


LDL Cholesterol is Vital to Health

Our bodies need normal amounts of LDL cholesterol for cell growth and repair. However, if blood levels of LDL cholesterol are too high, they can cause the gradual buildup of plaque on the walls of our blood vessels. This leads to a condition called atherosclerosis which is the main cause of heart disease and stroke.



Half of all heart attack patients
have normal total cholesterol levels.

I prefer to use coconut oil when cooking. It's tasteless and works like olive oil would, but it also pops and crackles when heated too much, just like olive oil. Because of this I've been wanting to try ghee but haven't found it in grocery stores. Maybe I'm not looking hard enough. I much prefer more organic methods of cooking than butter, but I must say, I've read that margarine is in fact worse than butter, so who knows. Maybe butter isn't all that bad. But what I do know is that coconut oil is a healthy fat and has many benefits whereas butter does not. I read somewhere that consuming 3-4 Tbs. of coconut oil a day can actually help you lose weight, but you have to find the organic oil that hasn't been bleached or altered in any way.

But the bottom line is, to each his own!

Yes, coconut oil is a good alternative too pixieposey and tolerates heat without the toxicity better than olive oil. Its also a good choice for people who really want to avoid animal fats altogether.

If you to to the international foods section at your grocer you can usually find ghee there. My personal preference is go use fresh butter, and organic butter at that.

But as you say, to each their own.

Umm.

1) I don't care what your "credentials" are.

2) I was speaking in general. Not TO you.

3) I am sure many here have "credentials" but choose NOT to put it into the conversation to "look" better.

You don't know me or my profession or my experiences.

So get over yourself.

It WAS and IS a choice.
