oh my oh my oh my! That is so good!

Just had quinoa cooked in chicken stock, with steamed veg, tossed in oil and lemon and some mint. I LLLLLLOOOVVVEEE it! (Now, how to keep from eating the other 3 portions.....)

I love quinoa so much, I am using it as my mid-day grain serving. I cannot believe how much of it yields from just 1/4 cup (175 calories). So far I have paired it with ratatouille, but I can't wait to add chicken, shrimp, etc, and make a sweet version somehow.

It cooks SO FAST! I will never make rice again!

I like to stuff veggies with it instead of rice. It tastes nuttier.

Trazey - first - I could have written the first paragraph of your post. Same exact thing for me. I always said I wasn't fat because I was stupid - I knew what I should eat. I was fat because I ate all the things you should eat and the bad things, too!

My DD has been telling me to try quinoa. Your cold salad sounds like just the starting point for me to jump in. Thanks for the push!
