Cocoa nibs are basically just crushed cocoa beans. The beans grow on fruit trees mainly in places like Brazil, Costa Rica, Ecuador, Venezuela and Africa. During harvest, the bean pods are opened so the beans can be dried and processed. While most of the cocoa beans are processed into your everyday chocolate bars, some of them are dried and sold as is, crushed into cocoa nibs, or ground into a fine powder.

Some cocoa nibs are slightly roasted, but you can also buy them raw at most  health food stores.
