5. Hard Boiled Egg with Chive and Tomato Cream Cheese

What you need is: 4 hard boiled eggs, 1 tomato, 1 to 2 chives and 1/3 of a cup of low fat cream cheese. Cut the hard boiled eggs in half and set aside. Using a dicer or knife, cut the tomato into 1/2 inch cubes and slice the chives into tiny bits. Place these ingredients and the cheese into a mixing bowl and mix on medium, just until blended. Spoon some of the cheese mixture onto each egg half. Enjoy!
