I was wondering if anyone here had any good low point recipes for pumpkin bread or cake? We just picked up some pumpkins and they look good!

Pumpkin Muffins

1 Point each



6 Tbs. Flour

2/3 C. Dry milk powder

1 Tsp Cinnamon

1 Tsp. Pumpkin Pie Spice

1 Tsp. Vanilla

1 C. Canned Pumpkin

1/3 C. Brown sugar

1 Tsp. Baking soda

2 Eggs

4 Tbs. Raisins

1/2 c. Grated carrots

Mix dry ingredients together in Med. Bowl. Mix Vanilla, pumpkin, eggs, raisins and carrots in med. bowl. Slowly add dry mixture with the pumpkin mixture, making sure to mix well. Spoon into muffin tin with paper liners. Bake at 350º for 30 minutes.

Makes 12 muffins
