Hi. I just started the weight watchers at home program three weeks ago. So far I have lost 8lbs which is encouraging. Now I am just starting to get myself into weight lifting and exercising. Does anyone have any great snack ideas other than fruit or veggies? Look forward to posting! Cari

I love these one point chocolate muffins. I have one or two sometimes after I workout or in the afternoon when I want something a little sweet.
1 cup whole wheat flour 2 tsp baking powder 1 tsp baking soda 2 cups “Kashi Good Friends Cereal,” crushed (you might want to just whirl this in the food processor) 1 1/4 cup 1% or skim milk 1/4 cup sugar 3 packets of Sweet and Low (I used Splenda) 1/3 cup cocoa powder 3 egg whites or 1/4 cup egg substitute 1/2 cup unsweetened applesauce 1/2 cup canned pumpkin or grated zucchini (I used pumpkin) 4 tbsp chocolate chips Heat oven to 400°. Mix crushed cereal, milk, sugar, sweetener, egg, apple sauce and pumpkin. Let stand for 5 minutes or more. In another bowl, mix flour, baking powder and baking soda. Add cocoa to the cereal mixture. Mix well, then add flour mixture and chips. Spray 14 muffins tins with Pam, fill 2/3 full and bake 20 minutes or until done. I froze mine as soon as they were cool so I wouldn’t eat them all right away. When I want one, I put it in the microwave for about 30 seconds. It makes the chocolate really gooey and warm. Yum. |
