Asparagus recipes
 
Does anyone know of or have any good asparagus recipes? I love them and so does my family and I'm looking for any good recipes to incorporate into my suppers. Thanks!

I roast mine in the oven with some olive oil and lemon pepper. It's yummy.

That does sound yummy! How much of the stem from the bottom do you cut off? And how long do they normally take to cook in the oven?

Oh my gosh - asparagus is so good by itself, either steamed or roasted that I'm seldom tempted to cook it with anything. :)

I just bend the asparagus and let the stem snap off where it wants to so to speak. I think I saw that tip on a cooking show. It depends on how you like them cooked. I like mine more crunchy so I keep them in for 15-20 mins

Last night, I roasted and tossed with:

1/4 cup finely chopped parsley
1 clove garlic, minced then rubbed into a paste with a hearty pinch of sea salt
1/4 tsp black pepper
Juice and zest of 1 lemon

Sooooo good. A little bit goes a LONG way.

LOVE my asparagus roasted!

I just made the asparagus and barley "risotto" recipe from the WW online recipes...it was yum! But it's a side dish with aspargus in it...not good if you're looking for asparagus to be your side.

I just steam mine. Once cooked, it's good hot or cold. Did you know it's really tasty with a squirt of Dijon mustard?

I also like to pile it on mixed greens & add some roasted red pepper & a sprinkle of goat cheese & a handful of walnuts or almonds.

I just made this as part of my dinner tonight!

Pan-sauteed in a tiny bit of olive oil (less than 1 tbsp) with 1 minced garlic clove, salt and pepper to taste. Cooked for probably 7-8 minutes, just until tender but I like mine on the crunchy side, too!
