I didn't have to pay WW today. Once again I got to keep my money for maui. I stayed exactly the same. YIPPEE!!!

Dee mentioning that "maybe" we could have that Jello Dessert for tea time today. Well I did make it again, with some modifications and have to say it turned out well enough, that you
WOULD want to serve it to company.
Here is the Better Revised Version:
Jello Dessert
Line 8x8 pan with 12 low fat graham crackers (6 pts)
Mix together:
1 pkg of Vanilla Instant Pudding (light)
2 cups of Peach Yogurt PLUS add a bit of milk if you think it's still too thick, (but don't make it too runny either)
Add about 6 peach slices, (cubed a bit) from a can of peaches.
FORGET THE SWEETNER, from the earlier recipe you don't need it.
POUR the mixture over the graham crackers.
Mix up Light Peach Jello with one cup boiling water, then add 6 or 7 ice cubes and stir until melted, and you end up with about 2 cups liquid.
Pour on top of the pudding mixture. Put in the fridge for about 4 or 5 hours (should be set by then), top with 1-1/2 to 2 cups low fat Coolwhip and sprinkle with 2 Tbsp. coconut.
You know when I made the dessert the first time, it was ok, but not really special, but today when I made it, it was much better. All the gals liked it at tea today. Dee commented that it was sort of a fresh summery dessert, and she's right. It was light and very nice. I think it's one I will make often. The first time I made it, the pudding part was too stiff and thick and I didn't like that. Adding more yogurt and the addition of a bit of milk made all the difference. One of the yogurts I used was a "fruit bottom one" well, actually peach, and it worked out well. Try this, I think you will all enjoy it, and it certainly is low in points.

Because the ingredients are simple I will even be able to make this in Maui.
