I haven't tried this recipe yet, but it sounds delicious!

Creamy Avocado Dressing
makes 3-4 cups (which is a lot!)

1- 14 oz can of Coconut Milk
3 ripe avacados
Juice of 1/2 lime
1 cup of fresh chopped cilantro
4 cloves of fresh minced garlic
dash of cayenne pepper
2 Tlbs roasted pepitas, ground

Place coconut milk in food processor. Scoop out all of the flesh from the avocados and add to the coconut milk. Squeeze the juice from the lime into the coconut milk and avocado mixture. Add the rest of the ingredients and blend until smooth and creamy. Transfer dressing to a jar and refrigerate. Keeps for 3-4 days. If dressing thickens too much, thin it out by adding small amounts of water until the desired consistency is reached.
