Breakfast

What are some good breakfast suggestions??!

Anything you like? What do you like?

Often, I just have fruit for breakfast. This morning, I made a smoothie which had celery, ginger, apple and strawberries.

Some mornings I'll have Bob's Red Mill High Fiber cereal. Sometimes steel cut oats.

The other morning I had a salad with mango.

This morning I had oat bran. It was awesome. I used this recipe: http://www.recipezaar.com/Oat-bran-B...-for-One-55286

Lately I've been eating Scottish oatmeal (Bob's Red Mill) with a Tbs of flax and a Tbs of wheatgerm stirred in. Another favourite is organic, plain, low-fat yogurt with fruit. Or scrambled egg whites with veggies and/or salsa in a wholegrain wrap.

ETA: Babygrant, the oat bran recipe looks really good!

Oh it was awesome!!!!!! The recipe says oat bran for one....but my 5 year old and I shared it and 1/2 of the bowl was just the right amount for me.

I go through phases of having the same thing everyday, then I switch to something else. Right now it's:

muesli - mixed grains, vanilla soymilk, Greek yogurt, 1/2 banana, some green apple, walnuts, cranberries

Ohhhh yummmm, I must say.

I'm not the biggest fan of breakfast. It takes a lot of motivation to get me to eat in the morning. This morning I had a cup of tea (as always) and two hard boiled eggs with a liberal amount of ground peppercorn on them.

I find that there are a million and one ways to make oatmeal. Today it was with mashed banana, flax meal and PB2 mixed in. Tomorrow it will probably be some cocoa powder, vanilla, and almond butter. The rest of the week, who knows! You can throw damn near anything on top of oatmeal or mix it right in: berries, yogurt, chocolate chips, nuts and nut butters, granola, cereal, protein powder, shredded coconut, crumbled nutrition bars, honey, agave nectar, maple syrup, cinnamon, carob chunks, dried fruit, the list goes on!

I also must say that I was wanting oatmeal but didn't have time to make it. Well one weekend morning I made a batch big enough for my family of 4 but it turned out not everyone wanted it, so instead of throwing it out I stuck the left overs in the fridge. Figured I should try it before deciding it would be awful (although I was sure the texture would be ruined!)

To my surprise it was wonderful, I had it over 3 days and no problems with the texture. Now this was not the loooong cooking steel cut oats it was the 5 minute cooking kind. I always seems to take me close to 20 minutes to get those cooked the way I like so this was so nice. Each day I was able to decorate the oatmeal according to my tastes :)

Just an FYI for those of us morning challenged individuals

My favorite breakfast is an egg white omelet with feta and spinach, with a whole grain toast of some kind...English muffin, bread, etc. I do like my fruit juice, and I know you are "supposed" to eat the whole fruit, but I have 3/4 c. of grapefruit juice every morning with breakfast, and some coffee too.

I had a leftover Indian potato dish the other day for breakfast.

I had an egg and Canadian bacon on toast another day.

I tend to eat the same thing for several days in a row, too: usually a fruit-yogurt smoothie, or oatmeal. I always add wheat germ and flax to both.

Lightly Toasted Muesli, 1/2 a banana, yoghurt.

I am addicted

My favorites as of late:

fresh strawberry yogurt
1/2 cup plain or vanilla low fat yogurt
1 cup cut strawberries
1 tbsp honey or agave nectar
mix it up and enjoy! you can top with granola too, extra tasty!

blueberry cake batter smoothie (it just tastes like cake batter)
1/2 cup blueberries
1/2 banana
1 cup almond milk
1 serving Vanilla protein powder
1 tbsp wheat germ
1 tbsp ground flax seed
1/4 cup dry oatmeal

blend the dry ingredients first to grind up fine, then add other ingredients. add ice or more almond milk to adjust the consistency

I alternate between a few things. Love a scrambled egg on a slice of whole grain bread. Sometimes I have an egg and turkey bacon sandwich on whole grain, or have two slices of bacon and tomato on a slice.

Other mornings I have an organic multibran cereal and add raisins and maybe half a banana.

And sometimes, I have a gluten-free waffle with butter and fruit. Mmmm .. butter.

edzard 05-13-2009 06:31 PM

Just curious, why only the waffle gluten free when you have gluten in the other stuff?
