Pat~that reminds me of a recipe I had last year (sort of). You take cooked orzo (a kind of pasta that looks like rice) and add a bag of fresh spinach and some chopped tomatoes and steam it with a little garlic and olive oil. I served it with halibut. Oh, so yummy!
ETA: Here's the recipe:
Baked Halibut with Orzo, Spinach and Cherry Tomatoes (epicurious)
4 tablespoons extra-virgin olive oil, divided
2 tablespoons fresh lemon juice
2 6- to 7-ounce halibut fillets
1 cup orzo (rice-shaped pasta)
1 garlic clove, minced
4 cups (packed) baby spinach
1 cup halved cherry tomatoes
preparation
Preheat oven to 425°F. Whisk 2 tablespoons oil and lemon juice in bowl; season dressing with salt and pepper. Place halibut on rimmed baking sheet; sprinkle with salt and pepper. Drizzle with some of dressing. Bake until just opaque in center, about 12 minutes.
Meanwhile, cook pasta in large saucepan of boiling salted water until tender but still firm to bite; drain. Add 2 tablespoons oil and garlic to same saucepan; sauté over medium heat 1 minute. Add drained pasta, spinach, and tomatoes; stir to coat. Season with salt and pepper. Remove from heat. Cover; let stand 1 minute (spinach will wilt). Divide pasta between 2 plates. Top with halibut and remaining dressing.

My Favorite Winter Veggie
Butternut squash. Favorite way cooked: roasted in the oven with a drizzle of olive oil, dash of salt, nutmeg, cinnamon and a generous helping of pepper. Roast 1 - 2 inch cubes in a 375 degree oven for 1 hour until caramelized and wonderful smelling! Sometimes I like to mix them with cubes of sweet potatoes. YUM! If they are organic veggies, I cube them up skins and all! Extra fiber is a good thing.

I love brussel sprouts too! We are having some tonight in fact. I like to coarsely chop them and then sautee with garlic, cider vinegar, and just a touch of brown sugar (although I'm thinking of trying date sugar to see how that works.)

Oh I LOVE brussel sprouts as well. I roast them with chopped fresh garlic, a little sea salt and some cooking spray.
Libby, I'm a huge fan of butternut squash too. I've never made it though in cubes. Always cut in 1/2 baked in the oven. I think I may give your way a try. Sounds yummy.
I'm so forutnate. I just LOVE vegetables. It would be hard for me to choose just one. Cauliflower is DEFINITELY one of my favs though. I followed a recipe that Sheila53 gave out, for Thanksgiving. It was a HUGE hit with everyone. I made it again this past Sunday night. My kids loved it. And they were never fans of the stuff. Here's the recipe. It's FABULOUS. I didn't use the olive oil though, I just used cooking spray.
Cauliflower Poppers
1 head cauliflower, cleaned and cut into bite size pieces
1/2 tsp chipotle chili powder (or normal chili powder for less heat)
1/4 tsp garlic powder
1/4 tsp onion powder
1/2 tsp cumin
1/2 tsp salt
2 tsp olive oil
Preheat oven to 400
put cauliflower in a big baggie, add oil. Zip closed and shake to evenly distribute oil. Combine spices and add to cauliflower, close bag, shake. Bake on a baking sheet until tender, about 10-15 minutes.

Mmmmm, veggies. I just signed up for a CSA that gets air-freighted here from WA every other week (don't laugh - Seattle is local for us ) and I will get my first box on Tuesday. Here's what we're getting:
Delicata Squash
Leeks
Braising Mix
Baby Rainbow Carrots
Cucumbers
Bunched Spinach
Cremini Mushrooms
Braeburn Apples
Kiwi
Red Pears
Rainbow Chard
Satsuma Mandarins
And whoever it was up aways that wasn't crazy about rutabega - trying cooking it like a squash - with the skin on - though I agree it's hard to cut. My mom always mashed it with cooked carrots, which adds some sweetness. I probably ate this once a month for Sunday dinner as a kid.
