Well, at least I managed to sleep until nearly 5:30 am this morning :^: . Father's day today, so I get the opportunity to cook for DH :love: .... he actually requested this cola chicken recipe that I found here on 3FC!

I found the cola chicken recipe in the WW recipe section here on 3FC - it is chicken cooked in ketchup & diet cola (I KNOW it sounds gross, but it is very good).

The cowboy potatoes are what my MIL calls a potato dish made w/frozen hash brown potatoes, sour cream, cream of chicken soup, shredded cheese. You basically mix it all together & bake in the oven for an hour. I "skinny" it up by using LF sour cream, 98% FF Campbell's cream of chicken soup & LF shredded cheddar cheese.

mmm, those potatoes sound good. the jury is still out on the chicken, though!

And I should have asked earlier, what is that wonderful 4 point strawberry pie???

I really encourage you to try the Cola Chicken - the mix of the ketchup & the diet cola make for a barbequey-type flavor. It is quite good & DH loved it - the chicken breasts stay very moist and tender.

The strawberry pie is a WW recipe I got a couple of weeks ago. We liked it really well & the recipe is as follows:

Mile High Strawberry Pie

Bake one 9 inch pie crust & allow to cool.

4 1/2 cups strawberries (about 1 1/4 lbs)
1 cup water
8-12 packets sugar substitute
2 Tbls cornstarch
3 Tbls sugar free strawberry jello (3 of the small boxes)

Mix water, sugar sub & cornstarch together & microwave until it comes to a boil. Continue to cook 1-3 minutes until mixture thickens (as soon as I saw it was boiling, I took it out & it was pretty thick already - I didn't zap it any more in the microwave.)

Add the sugar free strawberry jello to above mixture. Add mixture to strawberries and coat. Pour strawberries into cooled baked pie shell.

Chill and serve with cool whip, if desired.

6 servings
Points per serving: 3.5 (w/o cool whip)
Add another .5 points if LF or FF cool whip added

Strawberry pie recipe
 
Hi. I was checking out this thread becasue I am new to maintenance. I saw the recipe for strawberry pie and I have one that is very similar that I thought I would share.

1 pt Strawberry Pie

4 cps cut strawberries
1 cp water
1 pkg sugar free strawberry jello mix
1 pkg vanilla cook & serve sugar free pudding mix

place cut strawberries in 9" pie plate. In a large bowl microwave pudding mix and 1 cup water for 3 min on high. Stir, microwave 3 min on high again. Add jello mix to pudding mixture and stir. Let cool 5 minutes. Pour over strawberries and refridgerate until solid.

Enjoy!

both those recipes sound so good. I love how you can eat a huge bowl of strawberries for 1 point. And I have strawberries ripening in the garden even now!
