  • KimberlyP, How do you fix your shrimp? I love to order it at restuarants but I've never cooked it at home before.
  • Yum! I had shrimp for lunch too.

    I steamed cauliflower, broccoli rabe and shrimp then drizzled it with olive oil and Bragg's. So good! (and leaves me room for possible clam chowder and a martini tonight.)

    I melted 1 Tbsp Smart Balance Lite Butter, added some chopped garlic, Rosemary, salt and squeezed half a lemon into to the pan. I added the shrimp and cooked for 2 to 3 minutes because it shrinks up pretty fast and tends to be a bit tough. I buy the already cooked shrimp in a bag so I don't have to cook it for a long time. It seriously tasted like Shrimp Scampi!!

    This kind of made my laugh because what you described basically IS shrimp scampi. Just a healthier version by switching out Smart Balance for gobs and gobs of olive oil. (Although I suppose some places also add that weird bread crumb thing on top what's up with that?)

    Thanks for the inspiration. I've got bunches of shrimp in my deep freeze that I sort of forgot about.
