The WW Web site has an awesome recipe for eggplant Parmesan! I think you should take that!

SSS - you need to pick something you will like to eat. I understand trying to be polite, so pick something that is vegatarian "friendly" and stick with that.

You know what (& who) you're dealing with better than anyone here, that's for sure. Any advice or suggestions given is based on our knowledge of our experiences and may not match that or yours.
But I was thinking, isn't eggplant parmesan kinda similar to broccoli casserole - veggies and cheese? |
This only makes 4 recipes (3 points per serving):
Ingredients: 1 spray(s) cooking spray 1/3 cup(s) seasoned bread crumbs, Italian-style 1 Tbsp grated Parmesan cheese 1 tsp Italian seasoning 1/4 tsp garlic powder 1 medium raw eggplant 2 large egg white(s), lightly beaten 1 1/2 cup(s) canned tomato sauce 1/2 cup(s) part-skim mozzarella cheese, shredded Instructions * Preheat oven to 350°F. Coat a 9 X 13-inch baking dish with cooking spray; set aside. * Combine bread crumbs, Parmesan cheese, Italian seasoning and garlic powder in a medium-size bowl; set aside. Remove skin from eggplant and trim off ends; slice eggplant into 1/2-inch-thick slices. * Dip eggplant first into egg whites and then into bread crumb mixture. Bake eggplant on a nonstick cookie sheet until lightly browned, about 20 to 25 minutes, flipping once. * Place a layer of eggplant on bottom of prepared baking dish, then add 1/3 of tomato sauce and 1/3 of mozzarella cheese. Repeat with 2 more layers in same order. Bake until cheese is melted and sauce is bubbling, about 10 minutes more. Slice into 4 pieces and serve. |
WW also has a garlic bread recipe. You could make that.

Hey everyone, thanks for all the ideas! Unfortunately with a veggie dish it's difficult to not have some overlap in the it's a vegetable add cheese to it category. Eggplant parmesan/the recipe from shytowngal or something with portobellos would be more along the lines of a main veggie dish than the dish the other couple is making. And the hostess just told me she's probably making garlic bread, otherwise good idea. I'll let everyone know what I end up making. :)

I would marinate a bunch of veggies in balsamic vinegar, garlic, maybe a pinch of spice, salt, and pepper, a small drizzle of olive oil...let those soak up the flavor, then grill. A lot of veggies would work - zucchini, bell pepper, portabellos, eggplant, yellow squash, carrots...yum. You could also throw in potatoes, cut into 1/2 inch slices or so, that you par-boil and then grill, if you wanted something a little more substantial. Then toss with some fresh basil and serve hot OR cold...very versatile and very low-cal. And in my experience, a real crowd-pleaser!
If you want, you could top them with crumbled goat cheese...it'd take it really over the top. But you don't need much, or you could skip it altogether to avoid the veggie/cheese combo overload. |
