What about bring a thermos to work? Keep some stews nice and hot? :)
Salads, cold veggie dishes/slaws, "sandwhiches" made with slices of roast... |
A good thermos is a good idea. Do you have a plug in? For a "small" crock pot?
I have one that holds 2 cups. You can put anything in it. My current fave, is cabbage burger casserole. It's all of the stuff, in a cabbage burger, 97% lean ground turkey, cabbage, onion, pepper, no bread. Is awesome. In my bigger home crock pot right now is, skinless chicken breast chunks, onion, pepper, left over fat free refried beans, in a broth of one jar of salsa, and thickened chicken broth. :carrot: Here is the thing. We all have "life". It's up to us how we deal with it. I prefer to look at myself as a creative problem solver, instead of a "I don't, can't, etc., whatever. |
I make a little extra at dinner and pack my lunch after we eat each evening. I will throw whatever protein we've had into a low carb tortilla with some lettuce and dressing, or on a salad...or like others have said, make my own version of a lunchable, meat, cheese, veggies, fruit. Taking care of it the night before is key for me, I lie to myself when I say I'll do it in the morning.

Fruits, vegetable salad, sprouts, boiled eggs, vegetable soup are some good option for you. You can also prepare your healthy lunch one day before with your dinner.
