Lord, help me!
 
This weekend I have a conference to attend where on Saturday evenings we have something called "Sweet Thangs". Sweet Thangs is where people bring their best confections to share with every one. Think about 100+ of the best tasting homemade desserts you've ever eaten. That's what I have to deal with on Saturday. But to make it a tad worse, I'm obligated to bring 3-4 of my own creations. I typically make one diabetic dessert and the rest are sugary, carby, buttery desserts.

I'm sitting down right now going over recipes to figure out what I'm going to bring.

I could use some help for the diabetic dessert if anyone has a good one please feel free to post it. Last year I did a sugar free strawberry shortcake punch bowl cake but that was kind of expensive to make.


Going over these recipes is making me crazy! :dizzy: I've almost caved a couple of times but thank God I have 2 big oval mirrors on either side of the door way to the kitchen. I caught a glimpse of myself and stopped, I decided to get some green tea instead.

Why not make them all from diabetic recipes ? The guests will probably not know the differance.

I threw together a pie in a moment of panic and my mom-in-law loved it. Super easy:
1 container fat free cool whip
1 drained can of crushed pineapple
1, 8ounce package of fat free cream cheese
mix all the above in mixer and pour into a graham cracker crust. Chill until firm.

Good luck at the event; sweets are my down-fall! I would have to chew gum the entire time.

Eeek. I would not be able to resist. I would not go to the thingy at all!!

But since you have to (do you?), take a big ol' bottle of water with you, if you're full - you'll be less likely to try EVERYTHING. And remember, some of them might not even taste great - so you have to think, really worth the calories?

Fruit kabobs with yogurt dip? Grilled pineapple rings? Chocolate covered strawberries?

I have a go to fruit salad -- bag of green grapes, box of blueberries or similar, box of strawberries. Wash everything, slice strawberries and add a can or two of peach pie filling. Done. Could even dollop with cool whip if you wanted to or make it like layers in a trifle dish.

Surely you can't be the only attendess praying for something saner. Go ahead and make the saner dessert choices that don't have you slaving in the kitchen resisting temptation while cooking them up.

And when you are at the party... then you know they are there at least for you to eat -- and the other dieters, diabetics, gluten free people, allergies, and so on that can't cope with the crazy temptations others have brought.

Thanks for all the suggestions! I really love the fruit idea.

I was thinking of doing an "edible arrangement" my own version of course.
