Usually planned overs from dinner. Either just as the original meal OR on a salad base OR as a sandwich usually in an Arnold's round.
Today was left over roast with lots of alfalfa sprouts, raw spinach on an Arnold round. I had raw grape tomatoes on the side. I don't care for mayo so I usually don't have any type of spread on a sandwich. |
Something that I really like to do in cold weather is to cook a big pot of beans. I cook my own from the dried ones, it is cheaper and healthier since the canned ones have so much sodium. After the beans are cooked I put servings of them into dishes and add some pre-cooked lean meats and some frozen veggies. Sometimes I mix in a bit of crushed tomato or salsa. I freeze the whole thing and thaw and micro as needed. I sometimes add a little cheese to the top at warming time. I'm a calorie counter, so I use a wax pencil to mark my containers with the amount of each thing before I freeze them, that way I know what to put in my log on the day I actually eat them.
WebRover - I used to like mayo, but now that I eat healthier it just tastes gross. I put a little plain greek yogurt on my sandwiches. |
Yes lunch is so hard because you normally are not at home! I agree with the others try a salad with chicken on top. Also lunch isn't nearly as important as getting your two snacks in one before lunch and one after lunch.
