I wonder where Lauren is. I hope everything is OK with her. She hasn't been on since Friday.

Demona You are correct, Knowledge is power.

Something funny with me and the whole knowledge is power thing. I have no issues asking questions. My family (DH and Mom) on the other hand would rather die than ask a question. Last Friday we went to one of our favorite restaurants. I normally order salmon there, but I think I have a seafood allergy (to those who have been here for a while remember my allergy? I think I have it figured out, but I will update that later). This particular restaurant does not have a grilled chicken breast on their menu. They have grilled chicken salad, etc. So anyways, to avoid embarrassising my family, I called earlier in the day to make sure I could order a plain grilled chicken breast. They confirmed they could do that. I told my family about this. When we got to the restaurant, I could feel everyone was uncomfortable. Anyways it worked out well and my food was very good.

On to what happened last night. There's another place we go to that has recently started a special. It's a New York strip steak w/ 2 sides for $9.95. That's a good deal. I looked up the calories before we left, but I didn't know the size of the steak. I knew 8 ounces would fit into my calories. After the waitress took our drink order, I said "I have a question about the New York strip". I caught a glimpse of the horrorified look on my Mom's face. I know she was thinking 'OMG, Diana is asking another question'. Anyways it was an 8 ounce serving, so it worked out well.

I swear you would think they would be used to me asking questions, by now.

You girls are all sooooo busy! I just can't keep up! I'll catch up with personals laters

So we are definitely completely covered in snow now, lots & lot's of snow on the weekend ... winter has arrived.

I only have 1 more full week of work untill we leave for Australia!!!

Here is my plan for the day Tues 12/7/2010

B - 1 small whole wheat bun w/ natural peanut butter + 1 choc.soy pudding + 1 small banana

S - Handful of almonds + cucumber and carrot sticks with hummus

L - Barley casserole + 1 cup mixed veggies

S - 1 small apple

D - Stir-Fry - Marinated tempeh, kale, broccoli, tahini sauce on brown rice

Drinking: At least 2 cups green tea + At least 2L water

Have a happy, healthy and OP day

Hello everyone

Lauren: I'm ashamed to say that I fell off the wagon. At the beginning of Oct I went back to a 9-5 job and I had a hard time adjusting. My eating was totally out of control. Then I went on a 7 day cruise where I ate for almost 7 days non stop. I am so happy to be back on track and eating right.

I hope everyone else is having a great Tuesday.

This is why we need better laws and education for people who are interested in owning a pet. So many innocent lives tragically being cut short because of people's own stupidity and ignorance.

Diana - Unofrtunately we are prepared for snow so no matter how bad the snow is we have to come to work - crappy deal eh I took Monday off just because my body was twlling me I needed to rest. So I did! Got up just after 1PM!

Here is a really simple, healthy and delicious recipe that is sure to please. (It's also very inexpensive to make!) I made it the other night and it was really good. You can see pictures of it on my blog.

Stuffed Pasta Shells

Ingredients:
- 1 pack large pasta shells
- 1 jar organic tomato pasta sauce
- 1 block extra-firm tofu
- 1 small bunch fresh basil, chopped finely
- 1/2 cup nutritional yeast (you can find this at bulk barn near the spices, vegans use this to add a cheese flavour to dishes)
- 1/2 tsp garlic powder
- 1 squirt of lemon juice
- Salt and Pepper

Directions:
1. Preheat oven to 350°F
2. Cook pasta shells according to package directions
3. In a blender, pulse the tofu until it kinda looks like a ricotta cheese consistency (sort of crumbly)
4. Put tofu into a bowl and to this add the basil, nutritional yeast, garlic powder, lemon juice salt and pepper. Mix well. And set aside.
5. Spread the bottom of a baking dish with 1/3 jar pasta sauce.
6. Stuff each pasta shell with a couple of tsps of the tofu mixture and place into the baking dish with the pasta sauce
7. Drizzle another 1/3 jar pasta sauce over the top of the shells
8. Bake for 30 - 40 mins
