Oh and here is the Fish Taco Recipe. It's super yummy!
I changed the salsa ingredients around a little myself to adjust it to my own taste, I would suggest doing the same depending on what you like and don’t like. I added extra of the green chile salsa, because the original amount didn’t seem like enough, and extra red onion).
Enjoy!
Fresh Salmon Tacos
Makes about 6 – 8 tacos
Ingredients
Santa Fe Salsa
1 can (11oz) mexi corn, drained (I used regular canned corn)
1 cup cherry tomatoes, halved or quartered
½ cup black beans, rinsed, drained
½ cup shredded carrots
½ cup green chile salsa (I put more than ½ a cup, probably close to 2/3 cup)
¼ cup diced red onion (I love onion so I put in ½ a cup)
Salmon
2 salmon fillets (about 1 pound in total)
1 tbsp jalapeno and lime flavoured olive oil (you can use plain olive oil)
Salt to taste
Pepper to taste
Hard or soft taco shells (I used soft)
Shredded iceberg lettuce
Directions
In a medium bowl, combine the Santa Fe Salsa ingredients
Heat a large non-stick skillet over medium-high heat. Brush oil over salmon fillets, salt and pepper to taste
Cook salmon in skillet, about 4 mins per side or until fish is flaky
Let salmon cool then break into chunks
Spoon the Sante Fe Salsa onto the taco shells, garnish with some shredded iceberg lettuce and top with salmon pieces

2/19/2010 Confessions:
Breakfast
3/4 cup blueberry Special K cereal
1 cup 1% milk
1 piece low cal whole grain toast w/ 1/2 tbsp light veggie oil "butter"
Snack AM
small cup of coffee w/ 1/2 & 1/2 and sugar
Lunch
1 grilled turkey patty
1 whole wheat extra fiber English muffin
1 tbsp light mayo
lettuce, tomato, onion
1 serving baked chips
H2O
Snack PM
100 cal pack 94% ff smart pop
2 tsp Parmesan cheese
H2O
Dinner
2 grilled chicken fajitas
small serving chips and salsa
H2O
= apprx 1,525 calories
ETA: burned my popcorn beyond saving so had a 100 cal pack of chocolate cakes for my PM Snack.
Not the healthiest day but we desperately need to go grocery shopping.

I started out eating like a "normal" person then went downhill...
B 1 slice toast
L 1/2 sandwich/granola bar
S(nack) -chips, peanut candies, caramel candies
D tortellini, cauliflower
E(xercise) - walk 40 min.
My "snack" blew my whole day and the day is not over yet. I'm going to try to go to bed without eating anything. I've certainly had enough already! Ugh.

We ate at a Chinese Buffet. I think I did well. I avoided the fried foods and ate alot of broccoli and veggies. I had lean protein and green tea.

LaurenA I love your photo! I have an Australian Shepherd, what fun, nutty dogs huh? haha!
Well I'm ending my day a good note - breakfast for dinner! I'm having a bowl of raw oats with toasted slivered almonds, dried cranberries and unsweetened almond milk. YUM!
As for my "confession" - I didn't exercise today because I had class all morning, worked all afternoon/evening and then got home and went to bed because I was exhausted (I just haven't been getting enough sleep and I'm also sick). I figure today I'm allowed to recuperate a little and skip the workout!
