I am definitely eating my colours. Are you, too?

  • I am running a little low on supplies and I won’t make to a grocery store until tomorrow (Saturday). Romaine lettuce and spinach are all gone. So my creative salad today consist of the following:
    - red bell pepper
    - orange bell pepper
    - red beet
    - grapes
    - pine apple
    - sunflower seeds
    And for good measure, I tossed in a small handful of almonds, too. Mango vinaigrette. It’s very good and of course, I already had two colleagues asking me “what is THAT?” (pointing at the red beet).

    And, to be in perfect sync, my toe nails are painted with OPI’s Miami Beet from the South Beach Collection.

    My salad today was romaine, grilled chicken, corn, a few tortilla strips, salsa, and avocado salsa. MMMM Only 340 calories

    I too am often amazed at the colorful array of foods I am eating. And every now and then I will stop and think, "Wow. I eat really health-fully." Feels good. Tastes even better.
  • I love adding beets to salad - especially with a little low fat feta cheese. I really like that combo.
  • I love beets I've grilled them and added them to a salad before, so good. Also, shredded beet salad is one of my most favorite things in the world.

    Yesterday I made a salad and added mango to it. Today or tomorrow, I'm going to make a mango/papaya salad with cilantro and ginger.
